Aunt Yochana,
You can consider to publish a mooncake recipes book. I would be the first one to buy it with no doubt. Look at all the creative mooncakes you made lately. Getting on your blog being one of my daily "to do thing". Thanks for sharing the recipes if possible.
Aunty,
this mooncake must be very delicious as it has chocolate inside. would like to ask you one question, my friend in melbourne can't find the fried glutinous rice flour to make the snowskin mooncake. can she just buy the normal glutinous rice flour then fried it herself? thanks!
Hi Aunty, as usual all your mooncakes looks droolicious! And chocolate... yummy! What's in the centre of the filling? And I love the new fonts as well.
Hi Aunty,
Will u b posting any of the recipes from ur cake delight range? I liked some of the cakes posted in last months cake delight section but cannot find them in ur blog at this time. If ur not posting, can u email me some recipes?

mimi
Aunty Yo
Can you post this recipe asap? Thinking of making it next week. Btw, we dust the mould with what flour? Is Hong Kong flour (these used for making pau) same as your kou-fen? Cos I saw in the comments in one of your snowskin recipe that HK flour is used...sorry...1st attempt at making mooncakes..so may sound vy silly...
dear aunty yo,
may i know what is the centre of the mooncake? custard?
for the second layer is it lotus paste+melted chocolate+cocoa powder?
hv a blessed weekend ahead
dear aunty yo,

Hi Mummy Lucy...apologies for the long absence but have been quite caught up with other stuff...your bakes are still as awesome as ever...and I told Jo I will hold hands with her to make moncakes already hahaha...I hope to try the chocolate ones this year. Recently,my chef friend in the UK ventured into pastry from savoury dishes for the first time and she asked for references...of course I pointed her to your blog... =) Hope to catch up soon and happy baking!
dear aunty yo,
if i put durian paste in the middle, would it taste wierd?
is chocolate paste go along with durian? what is your opinion?
hv a blessed weekend!
hi aunty, thanks for your help with regards to the koufien. just like to ask, where did you get the mould to make the mock jelly egg yolks? and for this chocolate ping pi mooncake, where can i buy the chocolate paste, or is it chocolate lotus paste? sorry for all the questions. thanks alot.
Hi Gillian,
I bought my chocolate lotus paste from sun Lik. You can get the round egg yolk jelly mould from supermarket like Giant or maybe even Sun Lik. You can get all the mooncake ingredients from Sun Lik, Kwong Cheong Thye and Phoon Huat.

Hope Jo and you enjoy baking those lovely mooncakes. Have fun.
thanks for the referece...what's her name btw.

n2inpink,
The center part is the lotus paste mixed with roasted almond nibs.

Hi anonymous,
Yeah you can dust with hong kong flour (you can steam it for 5 mins. if you want to ).
rgds
Hi delia,
ask your friend in melbourne to dry fry the glutinous rice flour under low heat and then sieve it.
rgds
Hi anonymous,
your Tiong Ciu Pia sounds delicious but I don't have the recipe. I have never heard of this pia before nor eaten it.

I believe that aunty yo's traditional mooncake is similar with indonesian moon cake, only with different names..we have what I love most, tausa mooncake with egg yolk inside. we dont have ice cream mooncake in indonesia.

Aunty Yochana, have you ever consider conducting classes to share your baking with us? If ever you do so, do let me know as I am really interested to learn from you. Thanks.
Aunty wwhat't the difference between fried glutinous rice flour and glutinous rice flour? are they the same?
Thank YOu and GBU
Racheline
Hi Rachaeline,
The kou fen is a different kind of fried glutious rice flour. It will set when in contact with water and oil but the ordinary glutinous rice flour will melt and flow away.

Hi Aunty,
I read that the ingredient for the filling call for sponge cake. Pls confirm any plain spone cake will do? Do meaning I need to bake or buy sponge cake to make this? What's the purpose of the sponge cake can you advise? Sorry for asking so many questions as I am trying to make this and saw the recipe thus am bit curious...
Cyndi
Hi cyndi,
You can use any balance cakes that you have in your fridge. This is just a new method of making mooncakes, sponge cake mixed with melted chocolate.
rgds
Aunty,
Thanks for the info...Just try my 1st attempt on ping pi...fail very badly...the moment I add the water into the glutinuos flour and icing sugar...it is harden and when I mix in the shortening later...i become lumpy and the dough look a bit "disintegrated"... :( Will try again later or tomorrow. If you know why did I fail, pls enlighten me :)
Cyndi
Cyndi,
Mix the shortening, icing sugar and kuo fen together first then pour in the cold water.
Your method is wrong. try again and hope it's o.k. the next round.

Hi Aunty Lucy, i would like to try my hands on these lovely mooncakes.. Is it ok if i omit the sponge cake in the choclate paste? Do i need to alter any other ingredients? Thanx.

gossiping
Hi Aunty,
Finally got the ping pi skin right based on your steps? Thanks!
I was at Sun Lik yesterday and saw Smooth Flour for Snow Skin mooncake. Do you know what's that for?
Cyndi
Sorry think the flour is SOFT and not SMOOTH Flour :) Let me know if you know what's that for?
Cyndi
Hi cyndi,
Soft flour is for making snow skin mooncake.
rgds
Hi gossiping,
Use chocolate lotus paste to subsitute. Sun Lik is selling it.
rgds
Hi Aunty, do you know where sells good lotus paste and is not too sweet?
Hi Ivy,
Try Kwong Cheong Thye. I think they have samples for you to try.
rgds
Hi Aunty, you have tried those frm sun lik, are their very sweet? Thanks
Hi Ivy,
Aunty has got sweet tooth...so how ar? For me, it's o.k.
rgds

Is there any substitute for shortening? tks.

Hi aunty yochana,
may i clarify the sponge cake portion cos u mentioned (blend, chilled, cut into pieces) so meaning i have to use a blender to blend the cake into tiny pieces then chilled it and cut into pieces again...i was a bit cofused on that.
