can i ask u a qn i have in mind for very long, why does the loaf of bread have brown crust along its sides and it tastes different compared to the white part?

Hi cch,

The bread's outer crust is brown due to the direct heat from the tin which cooks it during the baking time while the inner part are well protected by the outer crust which was formed.

Some like the crust while some dislike the crust.

For me, I love the crust as it is normally more aromatic than the softer inner part. Again it's due to the direct heat which cooks it till crusty like a baguette.

You have a wonderful blog. May I ask if you use a Bread Slicing Guide for cutting your loaf. I always end up cutting wedges instead of slices. Do you know where in Singapore I can purchase one.

Oh I used to have wedges too but with the bread slicer, it's so much easier.

I've not seen it in Singapore but in Australia, it's easily available.

Hi Mool,

For sandwich loaf, you normally need to place your dough for second proving in the sandwich loaf pan. You have to roll it and place inside the tin. You can also roll one big swiss roll dough and place into the tin.

This is not alex goh's recipe but it does use a sponge dough to do it. Alex goh's Sandwich loaf is very good. You should try that but his proving time is longer while this one is shorter and the end result is just as good.

May I know for bread dough using 500gm flour, Can I use a 9" loaf tin? Your advise pls

Hi HSL,

If you are talking about bread dough 500 gm. then it's ok to use the 9" loaf pan but if it's 500 gm. bread flour then you have to use two 9" loaf pan.
Mine is a sandwich loaf pan with a top cover.

This is my first time commenting here but I have been visiting your blog everyday and drooling over all your bakes. You are such a fantastic baker! Hope to be half as good as you one day.

Aunty, I am thinking of asking my cousin who is studying in Perth to buy one of this bread slicer thingy for me. May I ask which shop did you buy yours at? And how much you pay? Sorry to ask so many questions, but you know guys lah... They don't really know how to shop for these kind of things. So better to give detailed instructions : D

Also, what is the thickness of the bread slices that you get from this bread slicer? Do they sell different sizes of slicers to cut different thickness of bread slices, or is it all one standard size.

Hi Michelle,

Ask your cousin to go to "House" to buy it. I saw it there...I actually bought mine from Adelaide. Sometimes they do come in plastic and I remembered that it cost around A$18-00 each. Hope I'm not wrong. As for the thickness of each slice of bread, I think it's all standard and normally what I do is if I want it to be thicker, I will just move the loaf of bread to the lines and slice it according to whatever thickness I want.
