Hi Melbourne Gal,

the cake is a little crunchy with the almond nibs in it and taste wise is not too bad. If you prefer a smooth sugee cake, substitute the almond nibs into ground almonds.

Hi Aunty,
I have done sugee cake a few times, but I feel its quite coarse due to the semolina. In the recipe it uses semolina flour, I'm just wondering if this is the same as the prima brand found in major supermkts. If not, do tell me where I can get it from.

Hi Kat,

Semolina flour aka sugee flour is supposed to a coarse meal. The Prima semolina flour is one of the best semolina flour. You've got the right flour. To rectify the problem of having too coarse cake, you have to soak your semolina in butter and sugar (after creaming), for a minimum of 4 hours before you embark on it. Another remedy is to cut down the amount of semolina and replace it with cake flour. I've not seen your recipe so I cannot find out why... Hope this helps.

Hi aunty,
thanks for answering my queries! the recipe i used also mention to soak the semolina for an hr jus like the recipe in 'Delicious
Asian Baked Treats'. I'll try the recipe which you posted and soaking it for 4hrs and see how it goes!
