Hi Aunty Yochana,

Your chiffon cake really tall n puffy n yummy. Can we greased the baking tin b4 we pour the batter in? I read from some article that we MUST NOT grease a Chiffon pan, is it true? Please advise. Thanks.

Hi Lucy,

May I ask how high is yr chiffon cake? I tried several times but still couldn't get it right. Have cleaned my equipment, beat egg white till stiff,etc, still cannot. Don't know what is not right.

Hi Wendy,

I never measure the height. The recipe called for a 22 cm. chiffon pan but I used a 23 cm. pan cos I don't have the 22 cm. pan.

Hi Mool,

You cannot grease a chiffon cake pan because you have to turn it upside down to cool it so that you cake will be light and fluffy. If you grease your pan, the cake might drop out from the pan thus preventing it from being light and fluffy.

I just love reading your blog and drooling over all the cakes that you bake. I am just a beginner in baking and your blog is very inspiring.I would like to know if i can bake chiffon cake using normal cake tin. If yes, do i place it at the lower rack of the oven too just like normal chiffon cake tin?

Hi Adel,

For chiffon cake, you need to invert the tin for cooling purpose and can only remove the cake when the cake is cooled.

For normal cake tin, if you don't line with a paper, you will have difficulty in removing the cake and if you line the tin, you will not be able to invert during the cooling stage and the cake might collapse. I suggest that you get a chiffon cake pan to make chiffon cake.
