Green Tea Red Bean Cake




















Green Tea Sponge Cake:

65 gm. egg yolks
20 gm. sugar
20 gm. ground almond
70 gm. cake flour
1/2 tsp. vanilla extract
35 gm. melted butter
95 gm. egg white
100 gm. sugar
50 gm. milk
8 gm. green tea powder

Green Tea Cream:

8 gm. Green Tea Powder
15 gm. Orange liquer - Grand Marnier or Cointreau
150 gm. unsalted butter
120 gm. instant cutard powder
180 gm. cold water

Sweet red beans (canned)
Some grounded pistachio nuts

Method for sponge cake:

(1) Mix boil and green tea powder till smooth and bring it to just boil and off the heat. Let cool. Add in vanilla extract.
(2) Whisk egg yolks and 20 gm. sugar for about one minute then ad in the green tea milk mixture and stir till well combine for about 2 to 3 mins.
(3) Whisk egg white with 100 gm. sugar till stiff.
(4) Fold in egg white to the milk mixture and then add sifted cake flour and ground almonds. Continue folding then add in melted butter.
(5) Pour into a 10" x 14" rectangular tray and bake at 180C for about 15 to 20
mins. REmove cake from oven and leave to cool.
(6) For mousse: Combine the green tea powder and orange liquer in a bowl and mix.
(7) In a separate bowl, mix the instant custard with cold water and then leave aside.
(8) Cream unsalted butter until creamy then add in custard cream spoon by spoon with the machine one till finished.
(9) Divide the mixture into two portions, giving one of the portion slightly more then add in the green tea mixture leaving the lesser portion plain.
(10) Cut the sponge cake into 3 pieces lengthwise.
(11) Spread green tea cream on one piece of cake then top up with another piece of sponge cake.
(12) Spread the plain cream onto the second layer, sprinkle red beans to your desire then top up with the 3rd piece of sponge cake.
(13) Place the last piece of sponge on top and then spread the other green tea cream on top. Level smoothly then sprinkle some chopped pistachio. Spoon some red beans on top and decorate as desired.
(14) Chill the cake before slicing.

Note: For those who doesn't like the bitter taste, please do cut down the green tea powder in the mousse section and add some sifted icing sugar to your taste.

I've tried your Sugar roll as well as butter cream recipe last night,they all turn out well.Can u recommend a best quality butter other than golden churn?

I tried a mouthful of green tea red bean ice cream from haato last night. The flavours go very well together... Bitter and sweet. But I eventually bought black sesame ice cream instead which was also very nice. Your cake looks very yummy too!

This indeed look great and that's my hubby's favourite cake and in fact was planning to use yr green tea mousse cake to modify and add in the red bean...what do you think? Pls share recipe for this when you are free but don't think can make it for me to bake it by tonight for his birthday tomorrow.

Do you use sponge cake or chiffon cake base for this red bean green tea cake?

I can't remember exactly but I think it's not lumpy, more on the watery side.

I wish to bake this cake this week. May I know how many eggs shoud I use for 65 gm. egg yolks and 95 gm. egg white?

Normally, the eggs I buy weigh about 60 grams each inclusive of shell. Please advise,

1 egg yolk is about 20 gm while 1 egg white is about 40 gm.

Hello Aunty Yochana,

I tried to make the Green Tea Cream but failed...

I used Bird's custard powder and mixed with cold water. It thickened very quickly and I had to stir till it dissolved. Is this the correct method?

Then, after creaming the butter, I poured in the custard solution by spoonful but it didn't combine at all. The result was all lumpy...

Please advise on what really went wrong. Thx, Cheryl

what do i mix together by sifting then boiling? or do i just stir it. I'm not sure what materials to put in the first step and in your material list theres two sugars so when do i put what?
