It exactly the same as making the Thai Ruby dessert. Cut the waterchestnuts into small dices and then colour it. Coat it with tapioca flour and sieve off excess flour. Boil a pot of boiling hot water and throw in the coated water chestnut till it floats up. Scoop into cold water till it's needed.
