Baked Prune & Nuts Loaf
Ingredients:
100 gm. Unsalted Butter
100 gm. sugar
1/2 tsp. salt
2 Large eggs
160 gm. pitted prunes (sliced)
3 Tbsp. orange Juice
1 no. grated Orange skin
40 gm. ground almonds
80 gm. Self-raising flour - sifted
40 gm. almond flakes - roasted
2 Tbsp. coarse sugar for sprinkling on top of cake.
Method:
(1) Cream butter, sugar and salt till creamy. Add in eggs one at a time beating well before the next addition.
(2) Fold in grated orange skin, orange juice, ground almonds, almond flakes (leave some for sprinking top) , prunes and lastly self-raising flour.
(3) Pour batter into a loaf pan 8" x 4" rectangular shape. Sprinkle some almond flakes and sugar on top and bake at 180C for about 45 mins. or till cooked.
(4) Leave to cool on a cooling rack before slicing.
