hi Yochana, Wanna ask when you bake chiffon cake, what tube pan size you normally bake ?

Also does a good mixer helps in high rise chiffon cake ?

Mine always turn crack on top...
Or uncook in the middle

Hi sukkimi,

I don't have a specific size. I go according to the volume...like how many eggs.
The crack on top could be due to too much batter and the cake kept baking higher and higher till it cracks thus resulting in uncook chiffon cake. the batter should come up to 3/4 of the tin only.
