Hi Aunty,

I baked the yam chiffon cake the other day. Half way through the cooling process, the cake actually fell out of the tube pan. Do you have any idea why this would happen? could it be due to the cake being under-baked?

Btw, would u be conducting any lesson for chiffon cake and macarons? Please let me know if u do as I would like to attend. My e-mail address is regreg@hotmail.com.

Thanks!

Regards,
Regina

Hey Yochana

I like this idea of making chiffon cake from Gula Melaka. It sounds so fragrant and I felt I can literally "taste" it. Ha ha. I have Gula Melaka sitting at home which I am still looking out for ways to do use it. Heez.
Just wondering, how do you find the taste of this cake?

Hi shiyan,

this is one of the best chiffon cake I've ever tasted. Give a try. It's so soft and fluffy and the gula melaka and coconut milk is simply delicious.

Hi Regina,

did you grease the chiffon cake pan? You must not grease the cake pan if you want to invert the cake. Another reason is that your cake is under cooked.

Wow ... Lucy ...your review is so good for this chiffon ...this will be my next chiffon bake project :-)

I didn't grease the pan. so the problem must be that i under cooked the cake. I'd try it again.

I'm sorry i gave u the wrong e-mail address earlier. It should be regreg9@hotmail.com.

Regina

Thanks Yochana!
I will give it a try. Can I use a pandan chiffon cake recipe, omit the flavour and replace the sugar with equal amt of Gula Melaka to make this cake?

Aunty Yochana said...

I guess it's possible shiyan but you have to boil the gula melaka with the coconut milk till it's dissolved.

Hi Aunty,
It's me again..
I have the same problem with Regina when I bake chiffon cake. I dont understand why the bubbles are so big..and it cannot be soft and spongy. Why is this?

I also tried making the rolled sponge cake.. but the cake deflate right out of the oven. I would really love to know why this is and how I can fix this so next time I make rolled sponge cake, it wont deflate. Aunty, can you please give me a tip? I would appreciate your reply - my email is : bighugsfrme@hotmail.com

Thank you so much aunty, I really really appreciate your talent!! It's so cool!!!! Thank you :)

Regards,

Angie

Hi Angie,

You probably could have over-whisked your egg white. After folding in the egg yolk mixture, pour into the tube pan and then throw the pan onto the table several times to let the trapped air escape.

rolled sponge cake...are you referring to swiss roll? The method of folding is important so just fold lightly will do.
