Oh, so BEAUTIFUL! I made one ganache last weekend and such a DISASTER, really must ask you for tips!

Hi mommydearest,

In order to have a smooth velvety finish, make sure your ganache is of the right consistency. Not too thin nor too thick. It must able to pour down smoothly. If it's watery, chill it for awhile and if it's too thick to pour, microwave for 10 secs before pouring. After pouring on top of the cake, jiggle the cake abit for the ganache to flow or lift it up slightly above the table and drop it down onto the table. The ganache will spread out into a smooth finish.

Thanks for your tips, will try it again when I feel brave enough. BTW, may I ask if you have a nice truffle recipe like Temptation's Etoile cake? :)

Gosh...it's been ages since I last baked an Etoile...got to dig out my recipes and if I do get it, I would like to try to bake it again. Thanks for reminding me and if it's good, I'll post the recipe.
