Cheese Brownie
Brownie Ingredients:
180 gm. Butter - melted
275 gm. brown sugar
3 eggs
1 tsp. vanilla essence
120 gm. self-raising flour
70 gm. cocoa powder
Cheese filling:
250 gm. cream cheese
45 gm. butter
80 gm. icing sugar
1 egg
Some chocolate chips to sprinkle on top
Method:
(1) Mix melted butter with brown sugar until well combined.
(2) Add in eggs, one at at ime, mixing well after each addition. Stir in vanilla essence.
(3) Gently fold in flour and cocoa powder and stir till smooth.
(4) For cheese filling: beat cream cheese, butter and icing sugar until well combined. Add in egg, beating well.
(5) Pour half of brownie batter into loaf pan, then pour in cheese filling. Then pour the balance brownie batter on top of cheese filling. Sprinkle top with chocolate chips.
(6) Bake in preheated oven 170C for 40 min.s or until cooked.
can u plez gimme this recipe to me? It"s look very moist n yummy... and surely i will be in heaven.

ReplyDeleteI didn't use any nuts for this cheese brownie.
I think I poured too much batter at the bottom, thinking that the cheese filling might sink to the bottom a bit but sad to say, it didn't sink at all but it went the other way round, floated up. So my top remains a thin coating only. I wanted my cream cheese filling to be exactly in the middle but it didn't.

i tried baking this brownie today
i dunno why the brownie batter was very sticky and heavy, it couldn't be poured, so i had to scoop it to put in the loaf pan, and when i put it on top of the cheese layer, it's all sinking, ended up mixed up with the cheese layer
then i baked it, aft 40mins i pouked to check, it's still wet inside (the brownie batter - the cheese was done) so i baked for another 15'
ended up it's overbaked, hard on all sides but inside is okay
the brownie becomes very dense
and very sweet
so sad...
what have i done wrong aunty?
was that becos i added the baking time?

Mmmm..this cheese brownie is very easy to do. No machine needed.
Just lightly fold the chocolate batter and it will not be so thick that you can even pour. Are your eggs too small? don't boil the butter with sugar for too long until it's too thick. Just boil until sugar is melted, then off from pan. Did u wait for the batter to cool down first until lukewarm? If you add when you just took off from the heat, the egg will get cooked and the batter will become very stiff.
I hope you can highlight to me further so that I can see where you went wrong.

ReplyDeleteyes you can sub for sugar if you don't like the brown sugar taste but I think cutting dwon to 150 gm. is too much. The amount of cocoa powder is quite high and if your sugar is too little, the cake will become dense and bitter. You can cut down the sugar by all means but not too much.

1st of all, i guess the eggs i used were too small
secondly, what i did was, i melted the butter then i off the fire then immediately i pour the brown sugar, i stir
then without waiting for the butter to become cooler, i mixed the eggs
no wonder....

ReplyDeleteNo problem baking in one tin though. Increase the baking time. I must remind you that normally for brownie, judge according to baking time. When the skewer you inserted in stick sticks slightly, no worry, take it out and leave it aside. It will still cook on it's own and dry up. When it's cooled and chilled, it hardens.

Am very very depressed .. Infact I took leave to try this baking today .. My hubby motivated me and asked me to try again ...
Do I need to grease the loaf tin ? Must it be lined with greaseproog paper ..

ReplyDeleteNext time if you find that it's still uncooked, place a piece of aluminium foil on top to prevent it from getting burnt and continue baking till cooked.

I actualy put the greasproof paper and buttered it before pouring the mixture in. Am I right to do that as my tin is a non stick pan.

ReplyDeletei just make it this aft, my brownies was raising very well when its baking, but after baking, it actually sinks down? I reduce the egg to 2 eggs instead, can it be the reason? Oh yah..after melting the butter, i pour in the sugar and mix well but it din melt very well, so i use a mixer to beat. Is it this reason my brownie is very oily. Sorry for the long post.. :)

ReplyDeleteI think it's more on the egg problem. cos normally eggs helps to bind the cake together. Try with 3 eggs and see how it goes..
The melting of the sugar with butter is not the problem.

i tried making this brownie. my brownie mix was quite thick, but pourable. then my cheese mixture was easy to pour and easy to spread. so when i poured the brownie mix over it, i couldn't spread it! and i ended up mixing the top part of cheese and brownie and it's kinda swirled/marbled. what went wrong? is it suppose to be thick?

I made this again. On my first attempt, the brownie batter is too thick and when I spread the top layer, the cheese mixture got mixed up with the brownie mixture. Ugly looking cake I've got. And I think I've over-baked it as the brownie was on the dry side.
ReplyDeleteNow, after adding the cheese layer, I pipe the brownie layer on top and use the spatula to smoothen the layer. It works! I'll try adding abit more milk to the batter the next time ;)
As my oven's pretty hot, I bake at 160C for first 40 mins and reduce to 150C for another 15 mins. Brownie came out moist :)
Gave 1/2 loaf to my gf and her family loves it too!

but i didnt melt the butter with sugar. i melted the butter then in mixing bowl i beat the butter with the sugar...i used 10x10x1 for brownies pan...1st i pour the choc batter then the cheese batter n on top of it sprinkle some choc chips...so yummy!!
