Baked Banana Pie





Ingredients for pie crust:

125 gm. Butter
40 gm. castor sugar
30 gm. custard powder
250 gm. Plain flour
1 no. egg

Fillings:

3 to 4 pieces Bananas - slice thickly
100 gm. Dessicated coconut - buy fresh coconut and toast it then weigh 100 gm
60 gm. Brown Sugar
60 gm. Melted Butter
40 gm. Plain flour
4 nos. eggs
200 ml. Milk

method:

(1) For pie crust: beat butter and castor sugar till creamu, add in eggs and mix till combined. Then add in flour and custard powder. Mix till a dough is formed. Press into a 9" pie pan (loose-bottom). Blind bake at 180C for about 10 mins.

(2) For fillings, mix dessicated coconut, brown sugar and flour together. Stir in eggs and milk and mix thoroughly.

(3) Arrange sliced bananas in the half-baked pie crust then pour the fillings over the bananas and rebaked again at 160C for about 50 mins. or till golden brown.

(4) Remove from oven and let it cool completely before slicing.

Banana pie is quite rare in Singapore and seldom see it in cake shop. Think I will try one of these days.

Hi angeline,

Blind bake means baking the tart or pie shell without fillings. You can place a piece of parchment paper over the pie, pour in some pie weights or beans and bake in the oven. This helps to keep the shape of the pie.

You can buy pie weights from shops that selling baking stuff.

I have not tried using subsitute for this pie cos dessicated coconut is easily available in SG. I've thought of breadcrumbs but it might become too soggy because of the eggs.

whats loose bottom?

Hi elaine,

Loose bottom means the bottom has a plate which is attached with a spring at the side of the tin. It's mostly used for cheesecake so that they can be removed easily from the pan.

Hello Aunty Yochana,

May I know whether the banana pie filling will be able to stand after baking? Because I had the idea of baking the pie filling on top of crust and cut them into squares (like the strawberry hearts). Will the banana filling collapse without support at the sides? Thanks
