I've tried the recipe twice and both isnt that good. Can u kindly go through with me and see where did I go wrong?
I follow the recipe but I'm not sure if I misinterpreted some portion of it. The mixing of palm sugar etc is ok.
Q1 The whisking of egg, I put in egg and sugar, then i whisk them together. Right or wrong? I tried using mode 1 then to the max (mine is just philips simple electric mixer). The end result is beige and its runny water. Not light and fluffy like what the recipe said
Q2 I add in flour to the mixture portion by portion. Initially, everything is good until the last few portion where the mixture becomes harder to mix and like 'fibres and lump'.
Q3 Then i mixed in the mixture of palm sugar, coconut oil. At this time, its rather imposible to get a smooth batter. The mixture from Q2 is already like sticking in lumps. In the end I used a sieve to smoothen the mixture.
Actually should I mixed everything (flour, palm sugar mixture) to the whisked egg & sugar and then mix them together? I spend so many hours doing them but turn out to be dissapointing. Pls kindly advise on what actually goes wrong. I'm a novice to baking, steaming. *headache*
Thank you, Auntie. Unfortunately, I'm in Canada and I suspect Chwee Kueh moulds aren't available here. I guess I'll have to think about getting muffin pans to fit in my steamer :)

Hi Jen.
ReplyDelete(1) Your beater though is not the high powered one should be o.k. Fatt kou doesn't need to beat till too fluffy.
(2) There nothing here tho.
(3) When mixing in the liquid, try to do it little by little till you get a smooth batter.
Make sure you fill up the mould till the brim so that it will open up.
Try again and you might succeed the next round. This amy beh's recipe is well tested.
