Mi Jian Kueh
This is a simple mi jian kueh which doesn't use yeast.
Ingredients:
500 gm. Plain flour
500 ml. water
200 gm. sugar
1/2 tsp. salt
1 egg
1 tsp. bicarbonate of Soda
2 tsp. Eno
grounded peanuts, butter and sugar - for sprinkling
Method:
(1) Mix egg, salt, sugar, salt and soda. Stir well and slowly add in flour and water, mix well till smooth and stand for 30 mins.
(2) Add in Eno and stir till well mixed.
(3) Heat up a pan with cover. Grease the pan and pour in a scoop of batter to cover the base of pan, cover with lid and let it cook for awhile.
(4) Uncover the lid, scoop some butter or margarine on top, then sprinkle groundnuts and sugar, cover the lid again and let it cook till the base is golden brown.
(5) Loosen the edge and fold into half like a semi-circle. Continue till batter finish.
(6) Serve hot.

i'm trying to find 2 recipes for the K jelly. One is for bandung k. jelly and the other is for the one we always see in shops - red top with a white base. i don't even know what it is called. would you happen to have a recipe or know the name of that kind of jelly?

Hello aunty lucy, very nice MJK ...i'll be trying them soon. I love mine with lots of peanuts n sweetcorn. Very clever in using the eno to achive the bubble n fluffy effect.
From the pics the pan u are using somehow different!
Will using a non stick pan be a good option to cook this MJK.

Your pan looks different , what type of pan is it?

I tried greasing with butter but the butter always turn black so I used cornoil.
My pan is AMC pan. You can use the copper mi jian kueh mould or any non stick pan but you need a cover - any cover will do.

You can replace it with 1 tsp. instant yeast but you have to add it in the beginning whereas Eno is added in at the end.

i love bandung, so i'm thinking of using that to make konnyaku jelly. the red top and white base jelly.. not sure what kind of jelly it is, i saw them selling at Subway and small stores before.

Can i keep the batter in the fridge for later use or overnight?
I think keeping in the fridge overnight should be no problem otherwise just do half recipe.

Love reading your blog..Yippee...MJK is one of my favorite kuih, like many of the readers, I live in US have not found such kuih exist yet. What can I substitute ENO with as I am not sure if I can find ENO in stores here.

What size AMC pot did you use for this recipe?

The base of the AMC pan is 7 1/2" and the top is about 9 1/2".

You can use instant yeast instead of Eno but for instant yeast, you have to let it ferment for at least half an hour...use 1 tsp.
