Eggless Mocha & Walnut Cake
Ingredients:
250 gm. butter or margarine
180 gm. honey or maple syrup
40 gm. soft brown sugar
200 ml. milk
1 tbsp. instant coffee dissolved in 2 Tbsp. hot water
1 tsp. coffee paste
300 gm. self-raising flour - sifted
100 gm. walnuts - chopped
80 gm. chopped walnuts for sprinkling on top
Method:
(1) Put butter, honey and soft brown sugar into a pot and cook over low heat till sugar and honey dissolves.
(2) Add in milk, instant coffee mixture and coffee paste.
(3) Mix in self-raising flour and chopped walnuts and mix till well mixed.
(4) Pour mixture into an 8" round tray lined with greaseproof paper and sprinkle chopped walnuts ontop. Bake at 175C for about 45 - 60 mins. or till cooked.
(5) Remove and leave to cool on wire rack before slicing.

I dont eat eggles in my cakes ! (so i dont have too many options ) This cakes feeeeeeeeeeeeeeeeeeeeeeeeeeeeels so yum . I would want to try it . Could you please share the recipie
so nutty and nice. Its it solely hand mix and no machine required. Is the texture compact or soft and fluffy since no creaming is required. thanks

This cake is solely hand mixed and the cake is moist.

What is coffee paste? Sorry to ask silly question ...
Hi Tricia,
Coffee paste is a paste with coffee flavour. To substitute this, 1 Tbsp. of instant coffee + 1 Tbsp. of hot water. If you like more coffee taste, can add a little more, it doesn't matter.

Yalor maybe i need to increse my intake of carrots n kei ci for sharper eyesight lol. Btw i just bough the ingredient and would like to bake it after dinner but there no one at home to eat because my mom is at my bro's house jaga cucu cause the maid balik indo for holiday. Do u think this cake will still taste ok if i bake it today but consumed only by tommorrow night. Eager to bake this today and not tomorrow.

You can bake it today and then wrap it with aluminium foil when it's cooled then keep in the fridge. Will be able to last for at least a week.

hello aunty lucy...managed to bake this cake today with sucess but my cake is kind of compact maybe because it does'nt required creaming so it will not appear fluffy ...is that how yours taste like as well.
I would love to bake your double chocolate fudge brownies though because there lot's of leftover walnuts from making this cake. Pls share your recipe in your most convenient time. thank you

Hi Nina,
Coffee paste is just a paste which has a strong fragrance. You can get it from your supermarket there. I've bought one from Perth - If I'm not mistaken, it's Chicory brand.

I a die-hard fan of your recipes. I do not like coffee, can I replace it with cocoa powder and cocoa paste? If yes, what is the equivalent measurements?

Yes you can sub with cocoa powder - 1 to 2 Tbsp. depending on the quality and grade of the cocoa powder. You can also omit the coffee powder without substituting with cocoa powder.
