Eggless Fruit Cake



Ingredients:

300 gm. Mixed Fruit
250 gm. water
1/2 tsp. cinnamon powder
1/2 tsp. nutmeg powder
200 gm. plain flour
1 tsp. baking powder
1/2 tsp. baking soda
80 gm. sugar
1/2 tsp. salt
60 gm. cornoil
1 tbsp. Honey
30 gm. Golden Syrup

Method:

(1) Mix mixed fruit, sugar, salt, golden syrup and water in a cooking pot.
(2) Pour in cornoil and cook over medium heat till boil.
(3) Add in honey and stir till well mixed. Continue boiling with low heat for 5 mins.
(4) Add in cinnamon and nutmeg powder.
(5) Leave it to cool slightly, then add in sifted flour, baking powder and baking soda.
(6) Combine all the ingredients thoroughly and then pour into loaf pan (greased and floured). Bake at 175C for about 45 mins. or till skewer comes out clean.
(7) Remove from oven and leave it to cool on a wire rack.
