Orange Cookies



Ingredients:

120 gm. Butter
100 gm. sugar
2 tsp. grated orange rind
1/2 tsp. orange emulco / paste
1 no. egg
160 gm. plain flour
2 Tbsp. Cornflour
1/4 tsp. Bicarbonate of Soda
1/8 tsp. salt

Method:

(1) Beat butter and sugar till creamy. Add in orange rind and orange emulco.
(2) Add in beaten egg and mix till well combined.
(3) Add in plain flour, cornflour, bicarbonate of soda and salt. Mix till it becomes a dough.
(4) Put dough into piping bag fitted with a star nozzle and pipe onto a baking tray.
(5) Bake at 160C for about 15 mins. or until light brown and well cooked.
(6) Remove, transfer onto a wire rack to cool completely before storing in containers.

What is grated orange rind? Where did you buy from?
1 no. egg = 1egg white+1 egg yolk?
Bicarbonate of Soda = baking soda?

Hi anonymous,

Grated orange - take a fresh orange and get a zester or grater to grate it and then chop it up.

1 no. egg is 1 whole egg (white + yolk)

Bicarbonate of Soda is baking soda.

can we use frozen ghee instead of butter aunty?

Hi tricia,

It's butter to use margarine rather than using ghee. Ghee will make the dough too soft to handle.

hi aunty,
I've tried baking the cookies just now..yummy:) but my mom says the orange flavour is not as strong. Can I add more orange flavour?if yes, how much more can I add?or e grind is not enough?and it's a little sweet.how much sugar can I reduce?

You can add and subtract to your taste cos I don't know how sweet you want. Just agak agak everything to your taste.
