Angel Peppermint Cake
Ingredients for cake:
160 gm. egg white - at room temperature
1/8 tsp. salt
1/2 tsp. cream of tartar
125 gm. icing sugar - sifted
70 gm. cake flour - sifted
a drop of peppermint essence
Topping: Stir mascarpone cheese till soft, then add in the rest of the ingredients.
250 gm. Mascarpone Cheese
2 Tbsp. Creme De Mente (peppermint liquer)
a drop of peppermint essence
a drop of green colouring
30 gm. Maple syrup or golden Syrup
Kiwi Jam
some Marshmallows and chocolate decorations
Method:
(1) Whisk egg white with salt and cream of tartar until frothy then gradually pour in icing sugar and whisk till thick.
(2) Fold in cake flour and peppermint essence and pour into a rectangular tray - 8" x 12" and level it.
(3) Bake at 170C for about 30 mins. or till top is brown and when inserted with a skewer, comes out clean.
(4) Remove cake from oven and leave it to cool.
(5) Slice into half and sandwich cakes with kiwi jam.
(6) Spread Mascarpone topping on top, cut cakes into small squares and decorate cakes with mashmallows and chocolate chips. Chill it before serving.
(7) Transfer onto serving plate and serve.

Aunty yochana, is it possible to add more peppermint essence to replace the Creme De Mente?

Hi Regina,
Yes you can add more peppermint essence but becareful not to put too much as the peppermint essence is bitter.

Please advise which brand of peppermint essence did you used as the essence which I bought does not have strong mint flavour. Have you try using fresh mint leave?

I really don't know the brand cos when I bought it from sun lik, it's already all bottled up.

Please tell me how you make such good stuff? You must be having some secret ingredient...How many years of learning curve did it take for you to get where you are at (In my definition of desserts, I think you are a the peak of dessert making)..Inspired by your blogs, I tried baking a pandan cake and it turned out into a disaster.. :( I just wish you were in bay area :(

Hi Shivani,
I starting baking at the age of 12.
Long time huh!!! Don't worry at that time, it was just simple chocolate butter cake and I even invited my neighbours over to savour.
