Gula Melaka Bread Pudding

Jadelotus, hope your overnight bread can be of good use:

Ingredients for the bottom layer:

80 ml thick coconut milk
4 pcs of overnight bread - cut into cubes
1 no. large egg (beaten)
1/8 tsp. salt

700 ml water
180 gm. gula melaka
10 gm. agar agar powder

For the top green layer:

350 ml. thick coconut milk
2 tsp. agar-agar powder
few pieces of pandan leaves
80 ml. thick coconut milk
50 gm. sugar


(1) Mix the coconut milk, eggs and salt together and then add in the bread cubes. Leave aside.
(2) Boil the 700 ml. water with gula melaka and agar agar powder till sugar and agar agar powder dissolves. Add in the bread mixture and stir evenly. Pour into an 8" square tray.
(3) Boil the 350 ml. thick coconut milk, sugar ,agar agar powder and pandan leaves together till sugar and agar agar powder dissolves. Off heat.
(4) Add in thick coconut milk and then add in some green colouring. Pour on top of semi-set bread agar agar layer.
(5) Chill before serving.

aunty, can i know how many teaspoon is 10gm of agar-agar powder? thanks!

1 teaspoon = 5 gm.

where can i get the thick coconut milk? market or NTUC? What kind of overnight bread you mean? Also can i pour the mixture into the agar agar mould instead of the square tray?thank you.

You can buy Heng Guan coconut milk from NTUC, Thomson Plaza.

Overnight bread means bread that you bought yesterday or more.
