Coconut Tarts



Ingredients for tart dough:

200 gm. Plain flour
40 gm. icing sugar
1 small egg
100 gm. chilled Butter
1/2 tsp. Vanilla Essence

Coconut fillings:

180 gm. Fresh grated coconut
75 gm. melted Butter
95 gm. castor sugar
2 eggs
5 Tbsp. Evaporated milk
a few drops of egg yolk colouring (optional)

Method:

(1) Rub chilled butter into plain flour till it resembles bread crumbs.
(2) Add in icing sugar and mix thoroughly.
(3) Pour in beaten egg and vanilla essence and mix slowly till it becomes a pliable dough. Leave in the fridge for 20 mins.
(4) Pinch some dough and press into small tart moulds.
(5) For fillings: Mix all the fillings ingredients together and fill into the prepared tart moulds.
(6) Bake tarts at the bottom shelf of the oven at 180C for about 25 mins. or till tart shell is golden brown.

I'm always confused between grated coconut and dessicated coconut. Wat's the diff? And where can I buy them?

Hi Ms. Tan,

Grated coconut are fresh grated coconut while dessicated coconut are dehydrated coconut where they come in tin form or plastic packaging.

It's easy for us to buy grated coconut in Singapore and Malaysia. Even NTUC sells the grated coconut in pkts by Heng Guan.

Hi annie,

if you want to use desiccated coconut, soak it with some evaporated milk first and then use it as fresh grated coconut.

hello hello can i ask u how come for e same tart recipe u mix e pastry using diff methods, like creaming e butter n sugar first then adding in flour or rubbing butter into flour? does it make a difference? thx alot ah.

yes you can use fresh milk but evaporated milk is more creamy and fragrant. Happy Baking.
