Rainbow Swiss Roll
Ingredients:
4 eggs
250 gm. Optima sponge mix
50 ml. water
1 tsp. ovalette
50 gm. cornoil
a drop of yellow colouring, apple green colour, strawberry paste + pink colouring, chocolate paste
120 gm. Butter cream
Method:
(1) Whisk eggs, optima flour, water and ovalette till thick and fluffy.
(2) Pour in cornoil and mix thoroughly.
(3) Divide batter into 4 equal portions and add in colouring and paste to each individual portion.
(4) Spread the colouring batter into a 10" x 14" sq. tray (25 cm x 35 cm), row by row until finish. Tilt the tray a little to prevent batter from flowing over.
(5) Bake at 200C for about 10 mins.
(6) Remove from oven and leave it to cool on a wire rack till completely cooled.
(7) Place swiss roll onto a piece of greaseproof paper. Spread butter cream onto sponge cake and roll into a swiss roll.

Dear aunty yochana, If im using apple green PASTE, do i need to add water to it?

no need to add water. Just add directly and stir.

Hi aunty yochana, is normal colouring same as paste? I find the paste more sticky, will it affect the cake? I hav 1 swiss roll recipe almost the same as yours but without water, so was wondering if it is ok to add the paste?

yes you can use paste but don't add too much cos they are more concentrated.

Hi aunt yochana, I juz started to learn baking and i had tried out this recipe but my cake turned out to be so rough and cannot be rolled? Can i know what are the reason that made it so?

it shouldn't be. Cake baked with optima flour are normally soft and fluffy.

what is optima flour? any replacement of flour if i don have any optima?

I know the proportion of the premix for optima flour.
So I think you should use any swiss roll recipe but use this idea of colours,

what a lovely rainbow swiss roll...looks really moist and soft...may i know 4 eggs is equal to how many grams?i always get a very dry swiss roll....:(..cant wait to try out for my family...
Hi Aunty Yochana, your cake looks lovely. It really inspired me to bake one. I had a lovely baking session until when I tried to roll it ... it broke where the colours join. Sigh ... can you advise me where I've gone wrong? Tks, Joan
