Mini ice-cream agar agar mooncakes

I'm very touched by Kellie's perseverance in trying to make ice-cream agar agar mooncakes for her children and I finally decided to post this recipe for her. Being a mother myself, I know how it is like when you desperately wanted to make your children happy and enjoy your food. Hope you like this Kellie...



This is Hoen Kwe flour:



Ingredients for the skin:
This recipe yields quite a lot of mini mooncake, so I suggest you cut down to 1/2 portion. Half recipe yields about 2 plastic trays of mini mooncakes.

1 pkt. agar-agar powder
200 gm. sugar
500 gm. water
20 gm. Hoen Kwe flour - can buy from Sun Lik or NTUC
10 gm. Custard powder (Bird's Eye)
450 gm. Dairy whipping cream
100 gm. of durian puree/strawberry puree/ peach puree/ any fruit of your choice
(optional)

Ice-cream - you can make your own ice-cream and pour into a 9" square tray and let it set then cut into small squares as filling for the mooncakes. You can also buy the ice-cream and then cut into small squares to fit into your moulds.

Method:

(1) Mix hoon kwee flour and custard powder together. Add in some water to dissolve it.
(2) Boil agar-agar powder, sugar and water till boiling.
(3) Lower down the heat, pour in hoon kwee and custard powder mixture. Stir till cooked.
(4) Off the fire, pour in whip cream and durian puree and stir thoroughly.
(5) Pour in some agar agar mixture into the mould and then put in a piece of ice-cream and then fill up the mould with the balance agar agar mixture.
(6) Put in the freezer until it hardens.
(7) Release from mould then serve.

    Hoon kwee powder is for thickening and you can buy it anywhere...NTUC or supermarkets. It comes in small cylindrical containers. Some comes from Indonesia and some from Malaysia.

  3. Thxs alot yochana. Btw, how does the skin texture taste like? Is there any alternative if i want to omit the fruit puree in the skin?

    As I've mentioned in my recipe that the fruit puree is optional. The mini mooncake will still taste wiothout any fruit puree and you don't need any substitute and the main taste will come from your ice-cream.

    For the part where you say 'Pour in some agar agar mixture into the mould and then put in a piece of ice-cream and then fill up the mould with the balance agar agar mixture'....This is done when the agar agar mixture is still hot right? If yes, then will this melt the ice cream then? I'm planning to make this next week..Hehehe, cant wait

  9. Hi May,

    You have to freeze your ice-cream till they are very hard. As soon as the ice-cream is in contact with the skin filling, it will set. Don't pour in when it's boiling hot. Wait till it cool down slightly.

    I like to read your blog so every day i will go to your blog. I really admire you as everthing you bake are very nice & temptingly delicious. Other than that you really very capable because i discover that you can make a few type of cake in a day. Last week i made the Strawberry Yoghurt Ice Cream, it was very smooth & tasty but not sweet enough. May be the strawberry that i bought not sweet & sour. I will try to make again. Thanks for your recipe.

    Yesterday i made the ice-cream agar agar(Straw berry flavour) without added the fruit puree. My child only eat the ice-cream and dont like the agar agar. I think next time i will add some fruit puree to the agar agar to make it more tasty! Anyway thank you for your recipe.

  12. Since Hoen Kwee flour is for thickening, can I substitute with equal part of cornflour or custard powder? Also, can I know how many tsp of agar agar powder is equivalent to 7.5g? And 10gm of Hoen Kwe flour is equivalent to how many tsp? And 5gm of custard is equivalent to how many tsp? Aunty could just answer me based on experience. Thank you.

    yes you can use custard powder instead.

    1 tsp = 5 gm.

  18. how to release the mooncake nicely form the pastic mould?

    I had a hard time trying to push out the mooncake from the mould.

    so scared it will damage the mould haha

    I puree it myself but sometimes I do use store-bought puree.
