Snow skin Pure Durian Paste Moon Cake



Durian Paste Ingredients:

1000 gm. Mashed Durian Flesh
80 gm. Sugar
30 gm. Santan powder
1/2 tsp. Durian paste
2 Tbsp. Fried Glutinous Rice flour - Kuo fen
1 Tbsp. Maltose
30 gm. Oil
20 gm. Teng Mien Flour (Wheat Starch)
a few drop of yellow colouring

Method:

(1) Fry durian flesh till dry then add in sugar and santan powder and continue frying till dry.
(2) Add in maltose, essence and colouring and mix well.
(3) Finally, add in oil, fried glutinous rice flour and fry till thick.
(4) Leave aside to cool thoroughly before using.

Ingredients for Snow Skin ingredients:

150 gm. Hong Kong Fried Glutinous rice flour
200 gm. icing sugar
180 ml. cold water
40 gm. santan powder
1/4 tsp. durian paste
20 gm. shortening - Crisco
a few drops of yellow colouring

Method:

(1) Mix H.K. fried glutinous rice flour, icing sugar, santan powder and crisco shortening together.
(2) Add in cold water, essence and colouring. Mix till it becomes a dough. Leave aside to rest for 10 mins.
(3) Divide durian paste to small portions and roll into round balls.
(4) Wrap durian paste with snow skin and press into mooncake mould and then knock out.
(5) Keep in the fridge until cold and set.
(6) Slice and serve.

Hong Kong Kao fen is a better quality kuo fen. It makes your snow skin softer.

huh....amrita..aunty is not so pro as to know how to make goodwood park kind of durian mooncake.

Nonetheless, if you want 100% pure durian, this is it.

hiya yochana,

i'm having problem with lotus paste again. i 'defrost' them yesterday and bake the mooncakes etc. however i still have abt 0.5kg left and i dont have fridge. so its lying on my table. do u think its still okay for me to use it today? i immediately put them into fridge when i bought them for the 1st day (because its not air pack). so u think its safe to use again? thanks

jen,

try to finish your lotus paste before it turn mouldy. If your lotus paste doesn't have traces of moulds, then it's ok to use.

Look so delicious... I really want to make this mooncake but nobody sell durian here, I can find durian paste though. Can I make without durian flesh? maybe add more glutinous flour? Do you know how to make homemade kao fen? I cannot find kao fen here. Thanks,

I don't know how to make kao fen. Just omit the durian flesh if you don't have durians over there. You can use chempedak instead.

If you are using tomorrow , then you don't have to put in the fridge but if you want to keep for a few days, you have to keep in the fridge. I prefer not to keep in the fridge because of condensation. I don't like the wet feeling on the paste.

Hi chezzyheart,

maltose is actually sugar cooked into a thick amber coloured paste or nowadays we also have the crystal clear maltose. You can buy it from wet market. I'm not too sure whether sun lik sells it. Try Phoon huat or NTUC, Giant.

Use golden syrup to replace maltose.

For tang mien flour, replace it with Tapioca flour.

Traditional mooncake recipe can make about 17 to 18 pieces.

Hihi, A bit Shua Gu here... need to ask a few questions. :)
- Fry durian flesh = without oil right? the fire should be small or medium? usually how long does it take to fry?
- Fried Glutinous Rice flour = we need to fry the glutinous rice flour? Or it's just the rice flour (kou fen) from the packet?
- How many durian mooncakes (Small) can this make?
- Can all of the ingredients be bought from phoon huat/NTUC?

Hi Ashley,

Fry the durian meat over low heat. No need to fry the glutinous rice flour. Just add it in straight from the packet.

I suggest that you buy your ingredients for mooncakes either from Sun Lik or Kwong Cheong Thye which I did. The one you suggested might not give you the same result as mine.

Great blog!! I wish to ask, can i reduce your pure durian snowskin mooncake recipe to yield less mooncakes? Will halving the recipe work for an end result of half of mooncakes as per recipe? Cos i have a small mooncake mould and I think I might end up with alot of mooncakes using your recipe.

Hi Lynn,

of course you can cut down to yield a smaller quantity. i think normally 1 recipe will get slightly more than 12 pieces depending on the size of your mould.

Its lynn again, thanks for your prompt reply. I live in Melbourne and I have difficulty finding the wheat starch for the recipe. However, I found wheat flour from the asian grocery here, on the packet label it says wheat flour for pastries and biscuits. (from indonesia) Is it ok to substitute wheat flour for wheat starch in this recipe?

Wheat flour might not be the same as wheat starch...

just omit it if you don't have it .

a few questions here...
you said ' add in maltose, essence...'
what is essence? are you referring to the 1/2 tsp durian paste?
same for the snow skin ingredients....1/4 tsp durian paste... to add where???? in your methods, you didn't mention.

For your 'white snow skin mooncake', you said something like...mix kao fen, tang mien flour and shortening together by the rubbing-in method...
what is rubbing-in method?
sorri, i am new, dont really understand these baking terms...hope you can enlighten me.

like to check with u. for ur durian mooncake recipe, how many mini mooncake can u make out of it? also is there any taste difference using tapioca starch rather then tang mien flour? I actually intend to use tapioca starch cos i can use it in my other cooking.By omiting santan powder will it affect the overall taste and lastly, is durian paste mean durian essence? sorry for troubling u with the questions. do not use tapioca flour to replace tang mien flour.

Durian paste is an essence.

You can omit santan powder. it won't affect the taste.

I'm a new fan of yours. Went straight out to get the stuff to try out this recipe. Thou only got them from Phoon Huat, I already love how the recipe turned out. Just 1 small little prob....how do you make the mold design standout more prominently? Mine was very vague after turning out the mooncakes. Or are there "better quality" molds to use? Also, how long can these snowskin mooncakes be stored? Tks for yr advice.

Hello!! Search the webpage for snowskin durian mooncake and walla!! Found yours!! Just to find out how to fry the duriang flesh, don't the flesh is going to be very soft and sticky to the frying pan? Do we use oil to fry? Thinking of making the mooncake this weekends.

However, the filling turns out like the long tube durian 'cake' that is sold in supermarkets and tourist shops. I followed the recipe closely except that I substituted with vegetable oil and golden syrup. Please advise. Thank you.
