Chocolate Cheesecake with Blueberries




Ingredients for the base:

250 gm. Digestive biscuits - blend into powder form
120 gm. melted butter

Mix the blended biscuits with melted butter and press into a 9" springform tin and chill in the refrigerator till set.

Ingredients for Fillings:

500 gm. Cream Cheese
180 gm. Sugar
150 gm. white chocolate - melted
5 eggs - 60 to 65 gm. eggs
180 gm. Sour Cream
1 Tbsp. Lemon Juice
1 Lemon zest - chopped
100 gm. Dairy whip cream
100 gm. Fresh Blueberries

Method:

(1) Cream cream cheese with sugar until craemy.
(2) Add in melted white chocolate and mix till well blended.
(3) Add in eggs one at a time and cream till well mixed.
(4) Add in sour cream, lemon juice and lemon zest.
(5) Pour in whip cream and mix till well blended.
(6) Lay fresh blueberries into the chilled biscuit base.
(7) Pour batter into the chilled biscuit base and bake in water bath at 160C for about 70 mins. or until set.
(8) Turn off the oven and keep the cheese cake in the oven for about 30 mins. then leave the cake inthe oven with door slightly ajar for another 30 mins.
(9) Remove cake fromoven and let it cool down before rerigerating for at least 4 to 5 hours.
(10) Release cake from tin and decorate with grated white chocolate curls.

Hi yochana,

I baked this cake yesterday n it was yummy. I used only 100g of sugar n the sweetness is just nice. Have u tried the "feather light cheesecake" on the recipe book?

Do we need to whip the dairy cream before adding into the mixture or juz add in the liquid form dairy cream?

No need to whip the dairy cream, just pour in and mix till slightly thickened.

Hi Aunty Yochana,

I'm new to baking and would like to know what do you mean by water bath. Also, when you said blend the biscuit is it using blender or food processor?

Btw, thanks for your help the other day on my queries on the "K" beater and mixer.

Hi clariss,

I blend the biscuits with a blender.

Water bath means you put a tray of water into the oven and then your cheesecake wrapped with aluminium foil or put a put underneath to prevent water from seeping in, place into the tray of water and bake at 160C.

Just omit the chocolate and add in extra sugar.

Hi aunty,

sorry to bother you again. but does that mean is omit the 150g chocolate & replace with 150g sugar?? how much sugar should i replace? for the pan, do i need to use the detachable bottom pan or just normal pan will do? if normal pan wat is the best way to remove the cake from the pan? i tried long time ago once using normal pan and the base came out all crushed & in bit & pieces. Any tips or advise on this?

Pls excuses me with such long list of question.

Hi Ugly Ducking,

Replace with 100 gm, sugar will do. A loose bottom pan is the best solution but if you don't have it, use an aluminium foil to line the cake pan with overhanging edge so that it's easier to pull it out.
