Hi Yochana
Your New York Cheesecake is a saviour! Ha ha. I made this cheesecake for my boss. Initially wanted to make choc cake for him but turned out to be a failure. So I made this cheesecake instead. It turned out good. =) Thanks for putting up the recipe.
You're most welcome Shiyan

Hi Yochana,
I would like to bake your new york cheesecake using my Ariston oven. Do you know which mode to set?
TIA for your help.
Hi bian bian,
I'm also using an Ariston oven for my cheesecake. Remember to use baine marie (a tray of water). Turn to top and bottom heat. I think it's like an equal sign. Use 160C.
rgds
Thank you Yochana I understand now the baking mode setting. Just need to clarify on baine marie.
Do i use warm or cold water? after this I should be ready for my 1st trial steambake. Just love to be able to bake New York Cheesecake.
bianbian,
if you use hot water then your oven will get heated up faster but if you don't have hot water, you switch on your oven earlier and put in the water for it to get hot.
rgds
hi. may i know what type of sugar to use?
hi xoxo,
use fine sugar or caster sugar.
rgds
Hi Yochana
Just curious - can I steam bake all bake cheesecake
Hi honeydoll,
steam bake is baking cake in a pan of water like double boiler in an oven. Cannot steam over stove.
rgds
Hi Aunty Yochana
Tried ur recipe today, taste fantastic! However, my cheesecake's "height" is abt 1/2 of that in your pics, do u know what's the reason?
Rgds,
Jalyn
Hi Jalyn,
With the amount of fillings, you shouldn't be having such a low cheesecake. I'm also wondering why yours is so low if you said that the height is half of mine.
rgds
Hi Aunty Yochana
When the cheesecake is ready, the centre will b set? meaning when i insert the skewer in it and take out, the skewer must b clean?
hope to hear from u soon!!
Thanx once again
Cheers
Serene
Hi Yochana
Thank you for posting such a delicious cheesecake recipe.
i baked the cake last weekend and it looked good until towards the end of the baking time - the cake cracked. Any idea why the cake cracked?
The cake looks brown at the side of the cake. Unlike yours - it is cream colour.
Thank you
Hi anonymous,
Did you steam bake your cheese cake. Steam bake means that you have to put your cheesecake pan into a tray of water while baking.
rgds
Hi Yochana
i did not put the cheesecake pan in the tray of water. I put a tray of water below the cheesecake pan.
By the way, where do you get the baine marie?
regards
Hi anonymous,
Baine Marie means putting your cheesecake into a tray of hot water.
rgds
Hi Yochana
Thanks for explaining what is Baine Marie. i thought it is a special baking tray!
Hope you don't mind if i ask regarding the height of the hot water in the tray. Is the height of the water similar to the height of the cheesecake? Or just some hot water in the tray?
regards
Hi anonymous,
ht of water is about 1/3 the ht of the tray. Make sure water doesn't seep into your spring form tin. Best to wrap up the tin with aluminium foil.
rgds
hi aunty,
I've tried yr recipe yesterday. may i know what kind of cheese u used to make this cake? The height of the cake after bake is it around 4cm? (exclude crust)
regards,
wish
Hi wish.
4 cm is quite normal for a cheesecake. I used Philidelphia cream cheese.
rgds
aunty yo.
if i dont wanna buy apricot jam just for the cake. what other suggestions do u hv for the top coat? :)
Hi Elaine,
Strawberry jam will be the next choice.
rgds
as for the apricot gel, can i replace it with gelatine powder?
Hi Elaine,
this apricot gel is for brushing only. You can omit it or just use any jam to brush it to get it a shine.
rgds
aunty yo.
my springform is 20cm.. which is like 2 inches short of the required one.
do i reduce the recipe? or do i just pour and throw the remaining away?
aunty yo.
another few questions.
instead of the apricot gel, can i use the strawberry swirl cheesecake method topping? :)
and is it necessary to do baine marie?
Hi Elaine,
You can create your own cheesecake with swirls on top. Baine marie is a must for this cheesecake.
rgds
Hi elaine,
Just cut down to 75 to 80% of the original recipe and you will get the right height.
rgds
aunty yo, i baked this today, and when i transferred it into the cake tin, the 1/4 of my biscuit base fell out!! :(
and my biscuit base is as thick as my cheesecake even tho i reduce to 80% of recipe to fit my springform. :(
haven't taste it yet, but it looks funky. :(
Hi Elaine,
Oh...no way that the base is as thick as the cream cheese.
The base only uses 125 gm. plain flour and it's a thin base not thick.
For the cream cheese, I used 600 gm. cream cheese.
From the above, you will know that it's not possible to be the same thickness.
The base will not so dry as you have mentioned. It has butter and eggs and they bind together very well. Shouldn't break.
You have to analyse yourself to see where you went wrong. The recipe has no mistake at all.
rgds
hello aunty yo!
i used the strawberry swirl base and reduced it by 80%. after cutting the cake, i realise the middle portion is not as thick, but the sides, i guess i didn't press down evenly look as thick as the cheese cake.
when i lifted it up, it kinda broke. i think i dont know how to lift the cake up properly and put it into a cake tin. any suggestions for that?
Elaine,
Try chilling it first before transferring or just let it in the freezer till it's hard. It will set and won't break.
rgds
hi yochana
if i were to reduce the recipe to 75% for an 8 inch cheesecake, would i have to change the baking time?
thanks
Hi anonymous,
yeah..you can bake for 50 mins. instead
rgds
hi aunty yochana
may i ask what is the temperature to bake the cheesecake?
Rgds
Diana
Hi Diana,
bake at 160C.
rgds
Hi Aunty Yochana
Can we exclude the lemon zest?
Rgds
Diana
Hi Diana,
Yes you can omit lemon zest.
rgds
Hi Diana,
Yes you can omit lemon zest.

Hi yochana,
1) Can use light sour cream instead of sour cream? Can't find it in NTUC. Will the taste be different?
2) Noticed delia used yoghurt instead of sour cream. Will it taste very different too?
Thanks,
Ling
Hi Ling,
No problem, you can use yoghurt or light sour cream.

Hi Yang Yang,
I didn't apply any topping on this cheesecake. The only I had are the rosettes which I piped using Non-dairy whipped cream.
rgds
Hihi Aunty Yochana,
I would like to try to make this cake as a bday pressie for my boyfren...
Can I jz ask you a few questions as I nvr try making it before?
Based on the ingredient that you listed, hw big is this cake?
Hi,
Since it's using a 9" springform tin, the size of the cake is 9".

Hi Aunty Yochana,

rgds,
marisa
helo aunty yochana...
i have tried the recipe n it turn out well... however, i bake it using mircrowave conventional oven...
if i use the normal oven wif top n bottom heat... for the steambake of the cheesecake... which layers do you suggest that i put the cake to bake...??
normal oven gt 3 layers tat we can put the mental tray... should i put it near the top or bottom or remain at the middle...
awaiting your advice.
thanks for puttin up such a good recipe..
hi hoe garden,
I normally place my water bath on the 3rd level of the oven which is nearer to the base.

Hi Aunty Yochana,
I've previously tried making Jelly hearts and it's very yummy! Now,
I want to try making New York cheesecake and Strawberry Swirl Cheesecake but I'm a bit confused with Steam bake and Baine Marie. Is there a difference? Does it matter if the tin (cheesecake) is in the tray of water or above the tray of water?
Also, for the Strawberry Swirl cheesecake, do I have to steam bake it too?
Thank you for all the recipes and help! :)
Hi helly,
Baine marie and steam bake is the same.
Strawberry swirl cheesecake - yes use steam bake too.
rgds

HI Aunty Yochana, could you let me know if I can replace instant jelly for the apricot gel with just gelatine? Can't find this in the supermarket... Thanks.
Hi Aunty Yo!
i had tried baking the cake today, but the top seem to crake a line. may i know why is this happening?
i had place the cheesecake in the tray of hot water, and placed both in oven to bake.
is there any steps that i did wrongly?
but thanks for the nice recipe too! =)
Hi anonymous
A fine hair like crevice is quite normal for a cheesecake.
Try keeping your ingredients in room temperature.
rgds
hi aunty yochana,
for the apricot gel, i have to make the instant jelly from the powder before i can use it or can i just use the powder?
otherwise can i just use apricot jam with the agar agar powder?
hi aunty, can I half this recipe? thanks.
hi applemint jackie
yes u can half the recipe, but you must reduce the size of the tin to 7" round.
rgds
hi auntie, for the glaze do we need to boil the mixture before using? thanx
