Aunty Yochana,

Thanks for posting the recipe.

Does this cake rise alot? Do we fill 80% full or all the way to the rim to get the pretty dome liek yours?

Regards.

Very interesting. Do you use the fresh milk cold from the fridge or do you need to let it come to room temperature?

Hi Aunty,
what is double-action baking powder?

Aunty Yochana said...

Hi proflower,

For steaming, better to use double action baking powder. It's leavening gases ar released once in contact with moisture and another time during steaming.

green said...

Hi Aunty Yo,

would like to ask if it is possible to replace the rice flour w/ other flour? or rice flour is a must for this recipe?

do u mind sharing the taste of this lovely cake?

would appreciate your answers once again..

Best regards...

Aunty Yochana said...

hi green,

Just omit the rice flour, I don't know what to replace and taste is subjective. After all the ingredients is very small and cheap, no harm trying it out.

hi aunty!

whats the difference btw double action baking powder and the normal baking powder? can the usual baking powder be used instead?

Anonymous said...

thank you for sharing the recipe. can't wait another. novia-indonesia.

Aunty Yochana said...

Hi icy,

I've explained to proflower about the doube-action baking powder.

Single baking powder is just one time action (leavening gases) - during mixing with moisture.

i've just steamed the milk cake... the recipe yield 8 huat kuey!!! all luffing at me! hahahaha...

my mum would be very happy with my 'huat' results!!! hahahha...

i subst. double baking powder with only normal baking powder... the end texture is very nice though... fluffy and light... with a tinge of milk taste. I'm using magnolia fresh milk. :)

but ur botak look looks cuter leh... :)

SB said...

Hi Aunty

I jus tried, my kueh is so sticky! I steamed for a long time and when tested with stick, it come out clean.
Really like kueh! Some crack, some remain botak. I omitted the rice flour and added some milo though.

Aunty Yochana said...

Hi SB,

The milo might have caused the stickiness.

rgds

Aunty Yochana said...

mmm...strange..

how come mine is botak??? Could it be because I'm old already then create all the botak head? Young ppl will huat lah..

Chris said...

Hi Aunty Lucy,
Funny leh. I also had the "huat kueh" effect this morning when i tried this recipe. Must say beautiful "huat kueh" though:). Maybe it's a sign, recession coming, more "huat huat" luck needed for everyone to pull through tough times. *Wink Wink". Regards, Chris

Aunty Yochana said...

Hi Chris,

Recession must see "Properties" - CASH IS KING not at bald heated kueh.

Anyway, *scratch* *scratch*....still can't understand.

hi Aunty,

My friend told me that her cup cake is also become huat kueh.. then hor.. I guess lah.. may be the heat is too high.. that's all huat lah..

hehehe

regards
feifei

Aunty Yochana said...

ya feifei, you've got a point...

The heat is very high...

rgds

Cookie said...

Hi Aunty, Pls don't mind me ka-poh here. I think the reason why the cupcake all become huat kueh is the heat.

If the heat/fire is too high your cake will cooked faster and the surface of the cake will crack open and become dry. Also, centre will rise more, resulting in a dome.

So use med fire for this cake only.
Hope this helps your followers.

Cheers!

Aunty Yochana said...

Hi cheers,

Yeah..you're right.

Thumbs up!!

Cheryl said...

Hi Aunty Lucy,

I tried this steamed cake and my results were like dense kueh, not fluffy like yours.
I used chwee kueh moulds and steamed my cakes on med heat. After whisking the sugar & milk by hand, I added the sifted flours and baking pwd (all sifted together) into the milk gradually and stirred to mix with hand whisk. Did i go wrong somewhr? Appreciate your advice.

Rgds,
Choo

Aunty Yochana said...

Hi Cheryl,

You stirred too much. Just stir to just combined will do.

Cheryl said...

Thanks Aunty Lucy. I wanna rid of the flour lumps to create a smooth batter. Must have over stirred as a consequence. Thank you so much for your reply.

dear aunty yochana,
thanks for this wonderful recipe. I let my 2 year old girl make it for breakfast this morning (with my help of cos) and it was a great success. We made a second batch after dinner using soy milk, but this time the cake was more dense. Thanks alot.

Hi Aunty Lucy,
I made this last night for breakfast this morning. DD1 loves it! My cake didn't "huat" like the rest, it's dome-shape like yours but crack slightly. Texture is softer than Huat Kueh.

Hi aunty,

I have been your silent follower for a while now. I check your blog religiously everyday. I wish I live in the same country as yours so I can attend your class. Anyhow, I have a question. Lately, I just cant seem to find the plain version of cake flour in the supermarket. I live in Australia. Is it possible to use the self raising version of the cake flour, and maybe omit the baking powder. Would these results to the same outcome? Your advise would be much appreciated.

Aunty Yochana said...

Hi Junita,

Just use any all-purpose flour to replace cake flour will do.

Hi aunty,

Thanks so much for your prompt reply. Will try and do this recipe tomorrow. I was making your sugar swiss roll today. Taste really good. But I was impatient and started rolling the cake when it was still kinda warmish. So it broke! =( Tastes really good still but not looking so presentable as my husband said.
