Red Bean Cheesy Bread











Ingredients for Bread Dough:

500 gm. Bread Flour
10 gm. Instant Yeast
60 gm. sugar
1 tsp. (5 gm.) salt
1 Tbsp. Milk Powder
50 gm. egg
250 gm. water
50 gm. Butter

Fillings:

500 gm. red bean fillings
100 gm. cheddar cheese (cut into cubes)
some black sesame seeds for sprinkling

Method:

(1) Mix all the ingredients except butter in a mixer bowl and beat till dough is well mixed and slightly springy. Add in butter and continue to beat till the dough is shiny and springy.
(2) Let it rest for 45 mins.
(3) Scale and weigh dough 40gm. each and then roll into round balls. Leave to rest for 10 mins.
(4) Roll out the round dough and wrap up with some red bean fillings and some cheddar cheese or sliced bananas as suggested by someone in my comments column.
(5) Place it into small cake rings and let it proof for about 30 mins. Slightly wet the top and sprinkle some black sesame seeds on top.
(6) You can opt to close the top with another tray or just leave it as it is and bake for about 15 mins till cooked.

I moulded the bread and place it into cake rings.

You sure can cook and bake well but sigh, I am sure others agree with me - to include recipe with each posting!

How about sharing your recipes for the cute cheesy buns and the fillings and also the Ee Puah recipes. My old hainanese mother-in-law is nagging me to make some for her eversince I told her about your blog. Please.....

I always forget about my tools and tins..Ok i will try to post them as much as possible. The cake rings has a diameter of between 1 1/2" to 2". Height about 1 1/2".

sometimes i cook it myself and sometimes i buy. it's very expensive to buy the Japanese type in meidi-ya supermarket.

Salt helps to beat up the gluten in the dough. Yes..you can omit it tho.

I wan to try to bake this but I don't know hw to cook the red bean paste.. Can u teach me??

Hi cwongst,

Soak 150 gm. to 200 gm. of red beans for 2 hours then add in some water to boil till soft. Texture is up to you. If you like it like a paste cook till very fine and soft. Add in sugar and cook till almost dry and then cool it. It's up to your preference , so no need to be very exact.
