Baileys Banana Loaf
120 gm. butter
175 gm. brown sugar
250 gm. cake flour
1 tsp. baking powder
1 tsp. bicarbonate of soda
3 Tbsp. Baileys Coffee Liquer
5 Tbsp. Nestum
200 gm. Mashed bananas
60 gm. toasted walnuts or pecans - coarsely chopped
(1) Cream butter with brown sugar till light and fluffy. Add in egg one at at time making sure it's well combined before the next addition.
(2) Slowly add in flour, baking powder and bicarbonate of soda. Then add in the rest of the ingredients and mix well.
(3) Pour into a 2 loaf pan 8" x 3" or bake in a 9" square tray.
(4) Bake in preheated oven at 180C for about 40 mins. or until cooked.
