Prune Lapis




Ingredients:

300 gm. butter
25 egg yolks
3 egg white
220 gm. sugar
1 tsp. vanilla essence
1 Tbsp. ovalette
160 gm. cake flour
450 gm. seedless prunes
1 Tbsp. rum
2 Tbsp. condense milk

Method:

(1) Cream butter till creamy and pale in colour. Add in rum and condense milk.
(2) Whisk egg yolks, egg white, sugar and vanilla essence together , then add in ovalette and flour. Whisk till double in volume.
(3) Fold in the beaten butter, rum and condensed milk.
(3) Prepare a 8" X 8" Sq. tray - lined at the bottom.
(4) Grill the cake layer by layer with prunes on alternate layers.
(5) Use a skewer to prick every layer and press lightly with a lapis pree to flatten each layer.
(6) When finish frilling, bake the cake at 180C for about 15 mins.

Ovalette is a cake stabliser. Can buy from supermarket or bakery marts.

your oven has a top heat - grill. The sign on your oven is a zig-zag pattern showing top heat.

Yes it's correct su.

Use egg white for cooking or bake cakes like fly african, macarons, angel cake...lots of cakes uses egg white only. Even pound cake uses egg white only.

How thick should each layer be? I saw some video clip some people have a standard weight of cream per layer.

If I use another size of sq tray, is it still okay

Hi qing,

Amount is based on the size of a cake tin. For an 8" sq., you can use about 100 to 120 gm.

for Lapis you can use other size if you want to. But then again, there will be a difference in height.

Hi qing,

Use 175C or gas mark 4 to 4 1/2.
I used Baby Belling oven and used 4 to 4 1/2 mark.

Hi Fansi,

For a normal lapis spice, it could be kept very long in the fridge, I think at least 2 weeks and for this prune lapis, more than a week, chilled in the fridge.

Hi aunty yo, based on your experience do you think I can prepare the batter and bake as it is, that is - baking it as a whole cake without grilling them layer by layer ? If it is possible, do I need to adjust the temperature? Thanks, Chris

Hi,
I just try to bake a kek lapis today, and everything is miserably failed.
1st of all, is my oven. I use 170C grill, how come its so smoky hot? My son I burnt the kitchen :P

I reduced to 150C, my 2nd layer was burnt in 2 mins. At the end, I threw the whole thing.

Hi melanie,

You mean you used this recipe or another recipe? This recipe is tested and it won't burn like yous. Your grill's temperature is not accurate anymore.

Hi Aunty,
I also had the same problem as Melanie. Think my oven's grill function is very hot, burnt top layer in 2 min flat. In the end, i lowered grill temp to 120 deg cel and opened oven door a little. Top part of each layer is nicely brown, but sadly i think inside still not very cooked. How? M using a Tefal convection oven.
