Hi aunty, I'm trying my hands at mooncake-making for the very first time. May I know where to get the transparent mooncake moulds you displayed here? I dropped by Phoon Huat last nite, but they only have the bulky pink ones that hold 2 mooncakes each.

bluecrystal,

I saw a lot in JB's Ng Ming Huat but why don't you try Sun Lik at 33 Seah street, next to Raffles hotel.

Hi
I am new in baking, may I know the fresh cream you are using is it the topping cream or the whipping cream? May I know the difference between both?

yochana said...

HI,

I'm confused with your topping cream and whipping cream....I think they are the same except different company put it differently.

Dairy whip cream contains 35% more fat than Non-Dairy cream. Non-Dairy cream is more for decorating a cake. For this agar agar , I used Dairy whip cream - it's creamier and more tasty.

hi Lizzi,

I normally buy all my mooncake moulds locally and it's easily available over here. Try getting into Yahoo and search for mooncake moulds. I will try to get the link and leave the link over here if I have the website.

Hi aunty,

i tried using ur recipe the other day...but i failed :(

My fillings are very soggy. As for the skin...while waiting for the first layer of skin to set (perhaps i waited too long?) the balance of my skin mixture turns thick...so i reheat it to 'save' the disaster.

Could you kindly tell me where i go wrong? Thank you!

yochana said...

Hi,

Your fillings are soggy because you did not boil the agar agar till it dissolves.

for the skin, prepare it only when the filling is set. If it hardens, just re-heat over a low heat will do.

Hello Aunty,

I would like to enquire approximately how long will it take to create 1 batch of 8 Agar-Agar Mooncakes (including setting time)?

Thank you

Aunty Yochana said...

Hi Anonymous,

Oh gosh...I really never time myself. I normally make the fillings first, set in the fridge (set very fast though), take it out. Make the skin, then put in the fillings and let it set again. There again, needs time to weigh the ingredients too. Hmmm, I can't figure out the timing cos I made too many items a day, so it's like one after another.

Hello Aunty,

I have a bit of trouble getting the mooncake agar-agar out of the mould and the fillings and the skin do not stick together and always seperates into parts when I finally manage take it out. Could you please advice me on what I could do? I already tried using a fork to scrape the surface of the agar-agar but it did not work.
