    Sorry I don't know where I can post my SOS request so I post it here. Hope you can help me in the following:

    Recipe:
    1egg white, 1/2tsp lemon juice, 200-250gm icing sugar.

    the recipe says whisk egg white till firm, add in icing & lemon juice and whisk well.

    What is the meaning of whisk till firm? how do i know if the whisked egg white is firm? does firm = stiff peak??

    I tried but did not whisk till stiff peak & my icing candy turn out cannot hold it's form means no shape at all... (i use 250gm icing sugar)

    HELLLLPPP plllsssss!!!

    am making sweet novelties (belly button cookie in Cantonese if u translate it directly la... haha) that's suppose to be the topping of the cookie that suppose to set after pipping it on.

    in that case, your icing sugar is not enough. You have to add in till it stiff enough.

    Sorry just 1 last question. Any tips how I can check if it is stiff enuf? Is it ok if I use electrical beatter to do it?

  13. Hi Michelle,

    what you can do is to pipe out one first and see whether it stands on it's own or not. If not, just keep adding sugar till it's stiff. Add a little lemon juice to it.
