it's better to use a springform or a loose bottom pan so that you can unmould it easily. You can also use a normal cake tin , let the cheesecake cool in the tin, cover the top with a cloth and loosen the edge and turn it upside down to dislodge it. This way you will not spoil the smooth top on the cheesecake.
