Matcha Red Bean Chiffon Cake

  1. that's one beautiful chiffon cake. i'm dying to try one.. never tasted one before. aunty, can you teach me how to change large chiffon recipes to fit a 18cm chiffon pan since i'm going to buy a small one.

  2. Hi Min,

    it depends on the recipe. For a 25cm to 27 cm chiffon cake pan, it can take about 8 eggs. For 20 cm, you can use a 4 eggs recipe. For 18 cm. it's about 3 . 16 cm chiffon cake pan is about 2 eggs.

    I hope this helps you in choosing your pan. I would advise you to buy at least more than one pan cos sometimes you volume might differ.

    May I know how u achieve those crumbs on top of the cake? Sometimes the green tea cake purchased at stores are of a vibrant green, issit due to the quality of matcha powder used or coloring is added?

    Those are streusel which means rubbin method of sugar, butter, flour, green tea powder n then bake at low temp till crispy.

    Natural green tea colour is always on the army green look. You can get the nice looking colour green tea from sun lik. I got mine from there.

    May i know how did you remove the chiffon cake from the tin so nicely?
    When i remove mine, the sides ('the skin') usually sticks to the tin. and i can't oil the tin, coz chiffon cake need un-greased sides isn't it.

    to remove the cake from the pan, just use a sharp knife and press it against the pan and slide it round. Most importantly, the cake must be cooked and brown otherwise you will not get a nice edge.

    Most canned Red beans are sweet. I cooked my own..not so sweet.

    I just boil the red beans with water till soft then add in sugar and cook till almost dry.
