    For the Chocolate Kanten Jelly, may I know what is dark chocolate -is it the bitter chocolate and what brand of whipping cream (full cream?) should be used in this recipe. Sorry for disturbing you. Thank you.

    for kanten jelly, use any dark chocolate that you desire - varlhorna / fechlin / karma - anything will do.

    Fro whipping cream, I used "Elle Vire".
