Durian Muffins









Ingredients:

(A)

160 gm. cake flour - sifted
1 1/2 tsp. baking powder - sifted
1/2 tsp. salt
130 gm. butter
100 gm. sugar

(B)

1 egg (lightly beaten)
50 ml. evaporated milk
50 ml. water
1 tsp. vanilla essence

Filling: Durian meat

Method:

(1) Rub the sifted flour with butter till it resembles breadcrumbs.
(2) Add in castor sugar and stir well.
(3) Pour in all the ingredients (B) and stir till well blended.
(4) Spoon a tablespoon of the mixture into paper cups, top up with a tsp of durian meat and then top up with another Tablespoon of batter. Remember to place the durian meat in the centre of the batter. Repeat till process finish.
(5) Bake at 180C for 20 to 25 mins. or till cooked.

Note: I used a food processor to do the job. Too lazy to rub with fingers.

My mum loves anything with durians. Really hope you can share this recipe with us Aunty Yochana. I tried making some muffins for my mum on Mother's Day but they turned out really bad. Hopefully this recipe can change my mum's impression of my baking skills!

Hi Mindy,

Just get a basic cupcake recipe. spoon a tablespoon of batter into paper cup. Scoop a teaspoon of durian meat on top of the batter . don't smudge to the side. Then top up with a nother tablespoon of batter.

If I buy fresh durian instead of the ready durian paste, do I need to add anything else to the durian flesh or just simply mesh it with a fork? Do I need to add any butter or milk? Tks.

Hi Kium,

Warm it up a little in the microwave oven. Then taste the durian. If it's not sweet enough, add in some sugar.

Good morning aunty! Hope u had a great holiday yesterday. This recipe is very interesting. I've never tried doing a muffin recipe using the rubbing method. One question...when mixing in the wet ingredients, must you ensure the mixtures are not overly incorporated as in baking cupcakes? Thanks.

Aiyo Jenny,

I don't know whether you believe me or not. I was too lazy to do the rubbing in method. I just use the food processor to do the messy job and it turned out very well. I blend till well combined.

You try this recipe and then let me know what's the outcome.

To me, the rubbing method is for biscuits and tart crusts. Let me try giving these muffins a good rub
and see how they turn out. Haha

Good morning, I tried this muffin last night but I did not used durian but jam instead & was very successful, soft & well bloom & split at the top as well. Thanks for sharing the recipe.

This recipe is good for those who doesn't have a cake mixer. Your fingers and a wooden spoon will do the job.

Hi Aunty Yochana

Made a batch of durian muffins awhile ago but minus the durian filling. Instead I replaced them with a teaspoon of (diabetic) no sugar blueberry jam and lessen the sugar to 90gm instead. They turned out so good, light and fluffy. Thanks so much for the lovely recipe. Will try using other fillings in future.
