Chocolate Almond Cake

















Cake Ingredients:

250 gm. Butter
1 1/2 cups Sugar
4 eggs
1 cup milk
1 cup Self raising flour
3/4 cup cocoa powder
1/2 cup Ground almonds

Ganache: Microwave till chocolate melts and combine with whipping cream.

250 gm. cooking chocolate
200 gm. whipping cream

Method:

(1) Cream butter and sugar till creamy.
(2) Add in eggs one at a time till well combined before the next addition.
(3) Add in fresh milk alternately with the flour and cocoa powder mixture.
(4) Fold in ground almonds.
(5) Pour into a 9" Round tray and bake at 175C for about 50 - 60 mins. or till well-cooked. Remove from oven and let cool completely.
(6) Slice cake into 2 pieces and sandwich them with ganache and then cover the whole cake with ganache. Decorate as desired.
(7) Chill cake before slicing.

Hi aunty, I saw that the ganache layer on the cake is very thick .. May I know how did yhou do that? WHen you pour the ganache layer on the cake, it will flow all over to the sides right? How come the ganache layer can accumulate on top of the cake making it thick? Can you tell me your secret leh? Heheh.. Thanks for sharing aunty..

Hi wen,

If you want the ganache to stay, u must have more chocolate than the cream and if you want flowy, the cream must be more than the chocolate.

Hi Lucy, been a long time since I wrote to u; although I still read your blog almost everyday. I would like to try baking this for a friend's birthday but she is allergic to nuts. So, what can I substitute the ground almond with, without compromising the result of the cake? Your advice is greatly appreciated.

1. can i melt the choc by boiling the cream, then stir in the choc till melt? (can't trust my microw)
2. can i substitute milk for buttermilk?

Hi, Aunty

It's Ai Mee again. I baked the cake last night. It turned out very oily and kind of 'wet' looking after i have refrigerate it. I followed everything.

1. What did i do wrong?

2. Are you using extra large eggs? The 85gm?

3. Use mixer til mix everything and only use hand to fold in the ground almond?

4. What brand are you using for the cooking chocolate? It's hard to find a good brand at my place. My ganache turned out looking 'sandy' instead of smooth looking like yours.

5. Can i use normal chocolate like cadsbury or vochelle instead of cooking chocolate?

I feel disappointed... Can't seem to bake beautiful cakes like you. I haven't try the Mango Yogurt Cake again. But i do have a few questions to ask if you don't mind.

1. It sank right after I took it out of the oven. Why does it sink?

2. The cake seemed heavy and packed, kinda dense.
