Hi Aunty, I simply love your blog & all your great bakes, the first thing I did in the morning in the office is to check your blog to see any new bakes & recipes, thank you & have been following it the last three months but do not know how to leave a note to you. Can you please enlight why my cupcakes, frangipny tart sink after baking? I have been following your recipe, yours is wonderful but my sink. Please & thanks in advance.
thanks for having breakfast here very morning. The trick to the shrinkage is to press the pastry into the tart, chill in the fridge for about 30 mins till harden then bake. This helps to prevent shrinkage of the tart shell.

The sinking normally appears in my cupcakes, the frangipane tarts, it is not the tart shell but the fillings, could it be the temperature or over-mixing. Thanks in advance.

ReplyDeleteThe sinking could be due to:
(1) Mixture is too watery
(2) Fruits - too little.
