Oreo & Raisin Cupcakes














Ingredients:

235 gm. Self-raising flour
100 gm. Oreo Biscuits - chopped
40 gm. Raisins
230 gm. Unsalted Butter
180 gm. sugar
4 eggs
1/4 tsp. salt

Method:

(1) Beat butter, salt and sugar till slightly creamy, add in eggs and and flour and mix till combined, then beat at higher speed until smooth and pale, about 2 to 3 minutes.
(2) Stir in chopped oreo biscuits and raisins and spoon into paper cups.
(3) Bake for 25 mins. or until cooked.
(4) Remove from oven and cool on cooling rack.

# If you use salted butter, omit the salt.

    it all depends on the size of your muffin cups. It should yield from 12 to 15 pieces.

    which cupcakes are you referring to? If you mean the overflow of the cupcakes, fill the batter slightly more than 3/4.

    How many it yields depends on the size of your muffin cups. With my muffin pan, I managed to get about 13 to 14 pieces.

    oreo with cream or without cream does not make a difference. Both can be used...

    I personally like it with cream.

    For this cake, I used papercups with a muffin pan.

    You can use the stand alone muffin cups if you don't have a muffin tray.

    I think your muffin pan are the short type. Buy some shorter paper cups.

    Whether it's paper cups or muffin cups, fill it to just above half of the cup and if you want a mushroom shape, fill to 3/4 of the cup will do.

  24. Hello Aunty, i've try this many times and it turned out great!!! Sometimes i bake for friends too, but some of them can't eat, since they are religious Buddhist(vegetarian) and they don't even eat BUTTER. Can i use margarine instead? And is there any different taste if i use margarine?

    I tried baking this yesterday but it turned out to be quite oily. Is it ok to cut down the amount of butter used? (what would happen to any cake if there's too little butter?)
    Apart from that it didn't look as good as yours but tasted fabulous anyway. thanks! :)

    You probably have creamed the butter too long causing it to turn oily.

    I want to bake some of these cupcakes, but my oreo biscuits' fillings are the choco and peanut butter variety, okay to use? or shd i just use the biscuits w/o the fillings?

    choco and peanut butter flavour will make a wonderful cupcakes...as for the fillings, it's up to u whether you want to add in or not. Omit it if you don't like it too sweet.

    Did you cut down the sugar? If you did, then it will not caramelize so well. It will not be too brown but they are actually cooked through. bring up the tray higher to the heating elements and they will become more brown.

    I tried these today, taste turn out great, except that colour was pale. Couldn't see that it was oreo at all : p

    Btw, why do you call these cupcakes and not muffins? Is it bcos the texture btw cupcake and muffin is different?
