Peach Muffins







Ingredients:

180 gm. unsalted butter - melted
220 gm. fine sugar
1/4 tsp. salt
2 eggs - lightly beaten
250 gm. cake flour
2 tsp. Baking powder
80 gm. ground almonds
1 small can of peach - cut into dice
100 ml. fresh milk

Method:

(1) Mix melted butter wih sugar, salt, beaten eggs and milk. Stir till well combined and then pour into the sifted flour, ground almonds and baking powder. Stir lightly.
(2) Add in diced peaches.
(3) Spoon into muffin cups and bake at 180C for about 25 mins. or till cooked.
(4) Leave muffins to cool on cooling rack.

    I was wondering if i could use self raising flour for this muffin - (happen to have leftover SRF). If it's ok, can i use the same amount of flour as per yr recepi? Any additonal baking powder or soda needed?

    yes you can use self raising flour. You can omit the baking powder or just add in 1 tsp. will do.

    You can omit the almond powder but increase your flour to 300 gm.

    Pls advise on the 2 Qs :-
    1.Do I have to wash off the syrup from the peaches after taken out from the can?

    2.When do I add the ground almond?

    No need to wash the peaches, just wipe it dry will do.

    As for the ground almonds, add in together with the flour.

    You mustn't stir too much making it very dense.

    Stir lightly until just combined will do.

    When baking muffins, we use double acting baking powder or normal baking powder? What the diff? After trying still can not get nice shape muffins like yours.

    I'm too lazy to use both types of baking powder - single and double so I just use Double action baking powder for everything (Crescent Brand).

    i would like to try out this recipe tomorrow. would like to know if i can add 100g of almond powder and reduce the flour by 20g? the reason is the package of almond powder i bought is 100g, want to use up all if possible. thks

  36. your recipe did not state 'Butter' in the ingredients but why does the method stated '(1) Mix melted butter wih sugar, salt, beaten eggs and milk.' ? Anyway, how much butter to put? salted or unsalted?

    I've try your recipe and it was great. Even my husband like it very much. Everytime I would bake other recipes, he would comment "there you go again" but when I said I'm going to bake this again he didn't say anything so I guess he really likes it. One thing tho, my muffins didn't raise up as high as the ones in your picture. On my first bake, i filled it only 2/3. Almost flat. On my 2nd bake I filled it to 3/4. it raise a little but not as much as yours. I didn't have almond powder so I used 300 grams cake flour as you advise one of your readers. Can you please help me on this? Do you advise to increase the cake flour?

    Do not add too much flour , it will make the muffin hard.
    Make sure your baking powder is still working and not expired.
    When folding, do not overfold, just combined will do. A few streaks of flour left in the batter is ok. Once they are baked, it cannot be seen.
    Try to get some ground almonds tho.
