Blueberry Cheesecake






Ingredients:

250 gm. Cream Cheese
120 gm. Blueberry Pie Filling
30 gm. sugar
13 gm. Gelatine powder
50 gm. Water
300 gm. Whipped cream

Sponge cake:

250 gm. Chocolate sponge mix / Optima flour
70 gm. water
4 eggs
1 tsp. Ovalette
70 gm. cornoil


Method:

(1) For sponge cake, whisk all the ingredients together except corn oil. Whisk till thick.
(2) Pour into 3 trays of 10" square trays or into rectangular trays. Bake at 175C for about 15 mins. or till cooked.
(3) Cool on cooling rack.
(4) For cream cheese: Soak gelatine powder with water and let it bloom. Microwave it for 20 secs.
(5) Whip cream till fluffy.
(6) Beat cream cheese with sugar till creamy then add in blueberry pie filling.
(7) Fold in whipped cream.
(8) Spread 1/3 of the cream cheese mixture onto 1 slice of cake. Then continue the process till finished.
(9) Decorate with some blueberry pie filling on top.
(10) Chill before serving.

    Wld like to seek help from u. Do u noe how to get rid of odour in the oven? cos I have not been using my oven for some time, and thats smell in it, hope to get rid of it before I use it.

    Just open the door overnight and wash with warm soapy water and then with a wet cloth.

    No recipe lah...I just anyhow take all our extra sponge cakes (u can see the different colours of sponge cake inside) from the fridge, balance cheese, cream , etc to build this up.

  11. Hello Jean,

    Slice the cake into half and spread cream on top of one slice of cake then put the other half of the cake on top. Cream the whole cake and decorate as desired.

    Where can i buy the bluberry pie fillings. Sorry for my ignorant question. U mentioned 3 tray what does that mean and u said slice the cake into half i hope you can advice me on this really sorry if i have lots of Q and pardon me am juz new to baking.

    You can buy blueberry pie fillings from any cold storage.

    Just 3 trays, divide the mixture equally into 3 portions then pour into the trays and bake.

    After opening it, just keep in the fridge. For non dairy whipping cream, keep in the freezer and it can last a long time.

    For Dairy whipping cream, keep in the fridge but do not freeze it. It can be kept for more than a week.

  23. Thanks Aunty, i made the Blueberry cheesecake yesterday its awesome the cake is soft the taste is really great. I bought the blueberry pie filling from PH, oya Aunty do u have any idea what i can do with Yam syrup i got it free from PH and u know i hate to waste it, is there any recipe which i can use this Yam syrup, ur advice and suggestion are must appreciated. I have Q regarding the whipping cream i think i beat too much and the whip cream became watery i throw the first batch and i make another one beat it for a short while till fluffy then i stop ( is it so when we beat the whip cream too much it will turn watery? )for the gelatine when do we have to add it. I just anyhow do, u know hehe turn out well. I like those ur recipe using optima flour and corn oil and am gg to search more on that.......thanks so v much Aunty Yochana

    When the cream cheese is beating with sugar , you can add in the melted gelatine while beating..

    As for whipping cream, don't overbeat. For Dairy Cream...it will turn watery. Always keep your non-dairy cream in cold place. Once they stay too long in room temp, they will lose it's fluffiness and it cuddles.

    Yam syrup..mmm..I've not seen it before so I cannot advise you but you can ask PH to give yu the recipe.

    Just wish to cfm the cream used to sandwich the sponge cake:

    cream cheese, sugar, gelatin, blueberry pie filling & whipped cream

    Reason for asking becos from the photos seemed to be just white cream (I thought supposed to be purplish in color as got blueberry filling). Also, the top layer, that means I need to keep some of the blueberry filling alone (without mixed)?. Thanks.
