Pandan Oats & Almond Cookies




Ingredients:

230 gm. butter or margarine
200 gm. sugar
1 egg
50 gm. quaker oat
100 gm. almond nibs
300 gm. plain flour
2 tsp. baking powder
1/2 tsp. salt
some pandan paste
cherries - diced

Method:

(1) Cream butter , sugar and salt till creamy.
(2) Add in egg and beat till combined. Add in the rest of the ingredients and bind into a soft dough. Chill if it's too soft.
(3) Roll into balls and arrange onto a baking tray.
(4) Place a diced cherry on top.
(5) Bake at 160C for 15 to 20 mins or till crispy.

Hi anonymous,

you can buy almond nibs or you can just roast some almonds and chop it up.

Can I use hand mixer and how long till i get the texture creamy...as i am afraid if too long...the cookie will not rise...

yes u can use a hand mixer. Cream till it's pale in colour.
