Durian Cream Tart





Pastry:

200 gm. Butter
80 gm. icing sugar
1/2 tsp. Vanilla essence
1/2 tsp. salt
1 egg
400 gm. Plain flour
1 Tbsp. Milk Powder

Filling:

80 gm. Durian meat
180 gm. milk
a pinch of salt
35 gm. sugar
20 gm. custard powder
50 gm. milk
300 gm. whipped cream - whipped

For pastry:

Put all the ingredients into a food processor and process to form into a soft dough.
Chill for 20 mins. Mould into small tart mould and bake at 175C till golden brown.
Leave to cool.

For fillings:Mix milk, salt , sugar and durian together in a saucepan and let it boil.
Mix 20 gm. custard powder with 50 gm. milk . Mix thoroughly and pour into durian mixture and cook till thick. Leave to cool completely.
Fold whipped cream into the custard and spoon the mixture into a piping bag fitted with a star nozzle.
Pipe into baked tart shells.
Sprinkle some nuts on top.
Chill before serving.

gm and ml are the same.

so 180 gm = 180 ml.

roughly 10 to 15 mins depending on the size of your tart.

Hi Aunty,
I like to bake this tart for the occasion of old people anointing mass in my church but before baking i have few queries.(1)I don't have kitchen food processor but i have an electric hand machine.Can i use this machine for making pastry.(2)instead of durian tart can i fill some fruits instead.

For pastry, just use your hands will do.

Yes , instead of durian, u can use any fruit of your choice.
