I wish to find out if I can substitute agar-agar powder with agar agar strands to make agar-agar mooncake. What is the equivalent in grams for the agar agar strands. Thank you.

Hi,

yes you definitely can sub agar agar strands with powder. I can't advice you how much because I have not been using strands for many many years. My rough guide is : use same weight. which means if the recipe ask for 10 gm. powder then weigh your strands 10 gm. too.

Snow skin has no eggs too so it's vegetarian... Mochi is definitely vegetarian.

Aunty Yochana, I tried making the snow skin mooncakes last week but had a diffcult time wrapping the filling and forming the balls...the filling was prob too wet but I just can not form balls with evenly distributed skin...one end (gathered edges) was so thick ...can you give some tips or suggestions, maybe a video? Thanks a million!

hi Asan.

I will open up a class on Mooncakes (from top to bottom) making sure that you will succeed in all your mooncakes. hahaha..but that will be next year cos i think it's too late now. it's better to attend a class and see it and can also do hands-on otherwise you will waste a lot of money on trial and error.

I happened to see mochi flour in Phoon Huat when I was out shopping for ingredients this afternoon.

Can I use the flour to do these mooncakes?

I've never used Phoon Huat's mochi flour before. I have many friends and blog fans who commented that the mochi flour is no good and it turned hard even after a few hours. The one I bought from Anna Phua and Zhong Yong are really good...
