Rainbow Crystal Cookies


















Ingrdients:

100 gm. Butter
60 gm. Ghee or Shortening
80 gm. sugar
50 gm. egg
250 gm. plain flour
30 gm. custard powder
1/4 tsp. salt
1 tsp. baking powder
1 Tbsp. Milk powder
60 gm. ground almonds
pink and orange colouring

Method:

(1) Cream butter, ghee, sugar and salt together till light and creamy.
(2) Add in beaten egg and the rest of the ingredients except for colouring and mix well into a dough.
(3) Divide dough into 3 parts. Leave one part plain, one part add in pink colourng and one part ornge colouring.
(4) Put the 3 parts together and pinch into small balls. Roll it round, toss into sugar and place it in small papercups.
(5) Bake at 160C for about 20 mins. till crispy and cooked.

yes you can omit shortening and replace it with butter.

I tried this with my twins today and somehow I thought they will expand and place a tiny blob in each cupcake patty like theones shown in the picture. but it turned oput the same size. Are these suppose to expand? Thanks! Oh by the way, the kids love it. Finish them all in an hour. Lol.

for this cookies, if toss around sugar.. will it become very sweet ? u use fine sugar ?

It's funny that although I tossed it with fine sugar, it doesn't taste too sweet for me. I do have a sweet tooth tho.

hi there aunty,
i've make this cookies and it is now a big hit. my brother's addicted to it.
1 question though aunty, you said here to 'Put the 3 parts together and pinch into small balls'. how do you do this? i failed. when i put them together, i can never pinch all colors. so i have to pinch a bit of every color and then roll it. it's quite tiring.
hope you can help me on this coz my brother will finished it up in a couple of days. he already asked me to make it more!
