Pandan Coconut Tarts


















Sweet Pastry:

250 gm. Plain Flour
1 Tbsp. milk powder
125 gm. Butter - cold
50 gm. sugar
50 gm. beaten egg
1/2 tsp. Vanilla Essence
1/4 tsp. salt

Fillings:

250 gm. Fresh Coconut
1 1/2 to 2 eggs
50 gm. Evaporated milk
1 tbsp. Pandan Juice
1 tsp. Pandan Paste
a drop of green colouring
50 gm. Melted Butter

Red Glaced Cherries - cut into quarters


Method:

(1) Process all the ingredients for the sweet pastry in a food processor. Chill in the fridge for 20 mins. before moulding into the tart mould of your choice.
(2) Mix all the coconut fillings together and fill into the prepared tart mould. Place a cut piece of red cherries on top.
(3) Bake at 180C for about 25 mins. or till tart shells are golden brown.

Dear Aunty Lucy, when you say process ingredients in food processor, what function to use? Cos I am new to this kitchen gadget. Thanks.

Hi Joanna,

In the beginning, Use PULSE a couple of times till it resembles breadcrumbs then pour in the egg mixture and pulse till it binds into a dough.

what other methods can i use instead of food processor? can i use hands to do that? i dont have a food processor.

Hi Trish,

yes you can use your hands to knead into a dough. Mix all the dry ingredients together into a bowl, rub in butter till it resembles breadcrumbs then add in liquid and mix into a pliable dough.

Hi aunty,

If I want to make a normal original flavour coconut tart, can I just leave out the pandan juice & paste? Do I need to add in anything else such as vanilla essence to substitute the pandan juice & paste?

O.k. you can omit the pandan juice / paste and sub with vanilla essence.
