Hello Aunty..

I was wondering when you do your durian related cake/puffs/rolls etc how do you choose your durians? As you know they all taste differently and thus everytime I make them they always taste different..

Any tips? Thanks

Oh yeah and another problem I have is regarding green tea cakes where do you buy green tea powder and how do you make the red bean paste from scratch?

Hi Kin,

For D24 durians, I was told to see the base. If it has a round brown paste , the size of a 20 cts coin, then it's D24 but I don't know whether inside is good or not. What I did was....open it, good one goes into my stomach and not so good, make cake and kueh but they are still premium quality lah.

Red bean paste has many types, for buns or for pow??
