Viennese Shortbread Sticks







Ingredients:

250 gm. Butter
120 gm. icing sugar
1/4 tsp. salt
1 1/2 tsp. Lemon Paste
Some grated lemon zest

280 gm. Plain flour
1 Tbsp. Custard Powder
30 gm. Milk Powder

Fillings: Mix together.

40 gm. Butter
40 gm. Shortening
150 gm. icing sugar

For Decoration: Mix together. Mix in egg white gradually and stop if it's wet enough.

100 gm. icing sugar
1/2 to 3/4 egg white
Lemon yellow colouring

Method:

(1) Cream butter, icing sugar and salt till creamy and white. Add in Lemon paste.
(2) Pour in all the flour, milk powder and custard powder into the butter and mix till a soft dough is just formed.
(3) Place dough into a piping bag fitted with a star nozzle and pipe out into 2" long dough onto baking tray.
(4) Bake at 170C for about 15 mins. Cool cookies completely before sandwiching them with fillings.
(5) Pipe some lines with the egg white icing sugar and leave it to set.
