Oh Aunty. This is really an interesting combination. How is the taste?
The red bean looks big from the picture, like kidney beans. Is it because the muffin is small? Or the red bean is really big??? heee...

Like to seek your advice. I bought Kevin Chai bakery book 'Easy Muffins and Cupcakes'. Some recipes used the melting matter. So I tried to melt the butter, sugar and salt over low heat for some time but it since like sugar don't melt in the butter, instead it harden. Why?

Hi Liying,

Don't cook for too long. When the butter melts, just pour in the sugar and stir over low heat. for about 1 - 2 mins. then remove from the stove. It doesn't matter if the sugar doesn't melt. It will dissolve into the cake when you bake it.
