Choc & Mint Cupcakes





Ingredients:

220 gm. butter
180 gm. sugar
3 eggs
200 gm. self-raising flour
2 Tbsp. cocoa powder
4 Tbsp. chopped fresh mint leaves
100 gm. chocolate chips
1 tsp. peppermint essence

For the icing:

120 gm. unsalted butter
1/8 tsp. salt
120 gm. icing sugar
1 tsp. peppermint essence
a drop of green colouring
some chocolate chips as decoration

Method:

(1) Cream butter and sugar till well combined, add in eggs then add in flour and cocoa powder. Mix until well combined and smooth.
(2) Add in the mint leaves and chocolate chips.
(3) Scoop batter into paper cups and bake at 175C for about 25 mins. or till cooked.
(4) Leave to cool on a cooling rack.
(5) For icing: cream butter, salt and sugar till smooth. Add in colouring and essence and pipe onto cupcakes. Decorate with some chocolate chips.
(6) Serve.

Aunty Yochana,
what shld i do to attain that levelled cupcake pretty look like your bakes? my cupcakes looks like "volcano eruption", u know, it forms a 'hill' peak & cracks abit at the tops when it is baked. =p

don't fill too much into the papercups. 3/4 of the tin will do. Too much batter will create the volcano eruption...

Hi auntie, too much batter and possible too high temp? I don't know. Could you enlighten me? Also, why do some cupcakes shrink in the cup too, upon cooling? I love the chocolate and mint mix.

Hi singairishgirl,

As soon as the muffins or cupcakes are baked, you have to quickly take it out from the pan to prevent shrinkage.

Got one stupid question to ask you - do we need to keep the cupcakes in the fridge after frosting them? How long can it last if it's at room temperature? Thanks.

Hi delia,

for this cupcake, you do not need to keep them in the fridge after frosting. It should be able to stand in room temperature.

Hi anonymous,

You cannot bake the cream...it will melt. To harden it, chill it in the fridge.

Any whipped cream that is left at room temperature for more than 30 mins. will start to soften down and if it's not properly whipped, it will even soften and melt faster.

What cream to pipe on to the cupcakes as I need to bake 1 day in advance? The whip cream will melt or soften in room temperature.

A muffin is using stirring method and they are between a bread and a cake whereas cupcakes are small little butter cakes.

the whipped cream depends on what you're going to use on. For decorating, whip till stiff peak..

hi aunty i was surprise that the cake would raise even without baking powder. i followed your recipe without the icing and minus out the mint leachoc chips. i did it the fly africa style with various colors and the swirl turn out really beautiful.sadly, cake has volcano peaks...even though i fill up to only 3/4 full... and "cap" or "umbrella shape" did not form. it look like a little hill instead. any advice? btw i love the mint flavour in cake :D

ur cupcakes are all very nice... can u tell me how to avoid the cake to leave the casing??? i got this problem wt cool cupcake, the casing tend to leave the the cake and it make it look like someone had peel the casing...tks.
