Chocolate Ping Pi Mooncake






Ingredients for skin:

200 gm. koh fun (commercial fried glutinous rice flour)
230 gm. sifted icing sugar
75 gm. shortening
260 gm. cold water

For filling:

450 gm. Lotus Paste
80 gm. roasted almond nibs
150 gm. bittersweet cooking chocolate (melted)
100 gm. whipping cream
550 gm. sponge cake (blend , chilled and cut into pieces)

Method:

(1) Mix all the ingredients for skin together. Do not knead too long. Weigh and scale to 65 gm. portion depending on the size of your mooncake mould.
(2) Mix lotus paste with almond nibs and scale into rounds balls of 40 gm. each.
(3) Mix melted chocolate and whipping cream with sponge cake and weigh into 60 gm. portion.
(4) Wrap the 40 gm. lotus paste with the chocolate portion and roll into a round ball.
(5) Take one portion of snow skin and wrap with filling. Press into moon cake mould and dislodge it.
(6) Chill mooncakes before serving.

hi Lucy, have you ever tried to make Tiong ciu pia, indonesian chinese moon cake , it is really delicious, there is so may variety for the filling such as durian, jack fruit, cempedak,raisin,jambu mete,chocolate etc, If you have the recipe can you posted in here, thanks alot. Your mooncake is really beautiful.

this mooncake must be very delicious as it has chocolate inside. would like to ask you one question, my friend in melbourne can't find the fried glutinous rice flour to make the snowskin mooncake. can she just buy the normal glutinous rice flour then fried it herself? thanks!

Can you post this recipe asap? Thinking of making it next week. Btw, we dust the mould with what flour? Is Hong Kong flour (these used for making pau) same as your kou-fen? Cos I saw in the comments in one of your snowskin recipe that HK flour is used...sorry...1st attempt at making mooncakes..so may sound vy silly...

Hi Mummy Lucy...apologies for the long absence but have been quite caught up with other stuff...your bakes are still as awesome as ever...and I told Jo I will hold hands with her to make moncakes already hahaha...I hope to try the chocolate ones this year. Hi Gillian,

I bought my chocolate lotus paste from sun Lik. You can get the round egg yolk jelly mould from supermarket like Giant or maybe even Sun Lik. You can get all the mooncake ingredients from Sun Lik, Kwong Cheong Thye and Phoon Huat.

Yeah you can dust with hong kong flour (you can steam it for 5 mins. if you want to ).

I believe that aunty yo's traditional mooncake is similar with indonesian moon cake, only with different names..we have what I love most,tausa mooncake with egg yolk inside. we dont have ice cream mooncake in indonesia.

Aunty wwhat't the difference between fried glutinous rice flour and glutinous rice flour? are they the same?

Hi Rachaeline,

The kou fen is a different kind of fried glutious rice flour. It will set when in contact with water and oil but the ordinary glutinous rice flour will melt and flow away.

I read that the ingredient for the filling call for sponge cake. Pls confirm any plain spone cake will do? Do meaning I need to bake or buy sponge cake to make this? What's the purpose of the sponge cake can you advise? Sorry for asking so many questions as I am trying to make this and saw the recipe thus am bit curious...

You can use any balance cakes that you have in your fridge. This is just a new method of making mooncakes, sponge cake mixed with melted chocolate.

Thanks for the info...Just try my 1st attempt on ping pi...fail very badly...the moment I add the water into the glutinuos flour and icing sugar...it is harden and when I mix in the shortening later...i become lumpy and the dough look a bit "disintegrated"... :( Will try again later or tomorrow. If you know why did I fail, pls enlighten me :)

Mix the shortening, icing sugar and kuo fen together first then pour in the cold water.

Your method is wrong. try again and hope it's o.k. the next round.

may i clarify the sponge cake portion cos u mentioned (blend, chilled, cut into pieces) so meaning i have to use a blender to blend the cake into tiny pieces then chilled it and cut into pieces again...i was a bit cofused on that.
